i am not there was any software or application to convert jpeg files into txt ones. so i think you should use a photo editing software or image editer like photoshop or others, so you can edit the text in your image. another alternative is you have to write the lecture notes to text file, you have scan it right so it is not difficult to write it again in text file.

I'm not sure why want to convert jpeg to text but from what I gather you are using a scanner for lecture notes. If this what you want why not set the scanner software to generate PDF files. (portable Document Files) are much easier and more compact to read, print and store. The take less disk space and can be scaled to fit any paper or screen size. Basic software can handle this and there is freeware as well as shareware out there too. Of course the big one is Adobe but the scanning software is high priced. Older versions can be had for cheap and reader/printer software is free.

Im confused with your question what the conversion you needed actualy? if you just want to change they extension it was easy go googling about ren or rename function in ms-dos.
jpeg format and text format is totally different, jpeg is images and text is ascii so there is no answer for your question there is no compressions can do that. it can be if you push it but you will have problem with result believe me. ascii and images is totally different.
If you scan some pictures and contains word on there and you want to edit it, you can modified it using photoshop or another images program but this is will be hard in process and you must have skill on it.

Optical Character Recognition software (OCR). I got this software rom my professor. It coverts your jpeg file to text. I hope you can find one in your local market. Or maybe you can download a trial out from the internet. good luck!

What you want to search for is what is called OCR software, Optical Character Recognition. It can generally perform its operations on most types of picture files, but like a previous poster said they are not the best for hand written notes. I know that there is software out there that can convert handwriting to text because its available for tablet pcs so I assume that there is probably some sort of OCR software that can do the same for scanned images.

till this time i never heard about software that can convert .jpeg file to text file. If you mean convert convert to .txt i'm absolutelly sure it can't be done because it will only be a code (hexadecimal code). But if you mean convert as .doc, you can scan it. The lecture notes that you scan can be a text document if the notes is only text without picture, the one of software that you can use is ABBYY fine reader, but it's won't work if your lecture notes is hand writen.
