Why don't magnets work on some stainless steels?

in the stainless steel the ions are arranged in different direction which cant be directed to one single direction but in iron substance they are in a specific direction.. hence magent doesnot work on stainless steel as it works in iron.. maybe i'hav explaind in a weird way but tat is wat happens..
