I've never actually made these myself, but my girlfriend gave me the recipe months ago & I am wanting to make it someday soon. But I have tried them & they aren't all to bad if they are made the right way. I'll give you the recipe though. Hopefully if you make them by then I would have tried making them as well. And we can share our experiences of how it had gone when we actually had made them. haha. They are actually called "Potato Chip Cookies." Ingredients: - 1 cup of butter - 1/2 cup of white sugar - 1 egg yolk - 1 1/2 cups of all purpose flour - 1 teaspoon of vanilla extract - 2/3 cup of crushed potato chips - 1 cup of chopped pecans Directions: - Preheat oven to 350 degrees F - Then in a medium bowl, cream together both the butter & the sugar until the mixture is smooth. Then stir in the egg yolks & vanilla. Then gradually stir in the flour until it is well blended, then mix in the crushed potato chips, as well as the pecans. Then drop by rounded spoonfuls the batter on to the ungreased cookie sheet. Then criss-cross the top by using a fork dipped in water. - Then bake cookies for 12 - 14 mins in the preheated oven. Or until the edges are slightly brown. (Advice I was given: My girlfriend told me when I had tasted them & asked for the recipe that.. Do NOT over-bake these cookies as she told me that they have the best flavor & texture when they are NOT over-cooked.) Allow to cool on cooking sheets. Tell me if you like them.. I hopefully will be making these sometime in the next few weeks.. Hopefully I don't mess them up.. Usually when I make cookies they always seem to turn out really well though.. But let me know how they turn out for you as well. All the best.. xx

My grandmother and my mother always made potato chip cookies and I've made them many times myself because they're easy. I'm not sure if our recipe is the same as yours (because it's not currently handy for me to check) but you should definitely try these. They have a taste and texture much like shortbread... they probably sound weird but, trust me, they're good :)

I have crushed them up to use in the broth when I make creamed chicken over biscuits.

I don't have a recipe per se, but my mother used to make macaroni and cheese casserole with canned tuna in it, and it would have broken up potato chips in it (or on top). The flavor worked well with the mac & cheese, and the crunch was a nice contrast to the creamy cheese.
