Now that you have mastered that wonderful Snack Cake Mix and tried a couple recipes, are you ready for more? I have a request for another recipe from Poly1. So I am going to post one of my favorite. Carrot Snack Cake. I do love carrot cake. It is not too sweet and yet it is filling when you want something light and tasty. Remember, This recipe is made to be used with the Snack Cake Mix. I have posted it in an earlier article. Hope you enjoy it and will incorporate all the healthy eating and cooking habits of making your own mixes to your families eating enjoyment! Carrot Snack Cake 1 package of Snack Cake Mix (posted earlier) 1 egg 1/3 cup vegetable oil 1 cup grated carrots 3/4 cup orange juice 1 teaspoon ground cinnamon 1/2 cup chopped nuts Preheat oven to 350. Pour Snack Cake Mix into an ungreased 8 - 9 inch square baking pan. In a med bowl, combine egg, oil, carrots, orange juice and cinnamon, beating with a fork to blend. Stir into Snack Baake Mix until blended. Stir in nuts. Bake 35 -45 min. until a wooden tooth pick insertied in center comes out clean. Prepare Cream Cheese Frosting, set aside. Cool cake on a rack. Spread frosting evenly over cooled cake. Makes 9 servings. This cake is great with or without the frosting Cream Cheese Frosting 3 Tablespoons butter or margarine softened 1 (3 oz) pkg cream cheese softened 1 2/3 cups powdered sugar siften 1/2 teaspoon vanilla In a small bowl, cream butter or margarine and cream cheese until light and fluffy. Beat in powdered sugar and vanilla until smooth.
