New Lunch Ideas

My husband and I pack our lunch everyday to save money, so I'm looking for unique lunch ideas that go beyond the boring old sandwich. We don't have access to a microwave where we work, so it has to be good eaten cold. Let me know your ideas!

I make a lot of pasta salads. It's pretty simple: start with cooked pasta, any sort of salad dressing, any cooked or lightly steamed veggies, and a protein ingredient, like tuna or beans. My favorite is bowtie pasta mixed with garbanzo beans and tuna, dressed with lemon juice and olive oil. I'll usually add some capers, fresh parsley, black pepper and minced garlic, too.

Thanks that's a great idea. Especially for summer lunch meals. I make similar meals like this all the time, I should have thought about it for our lunches!

It is hard. Mine takes a lunch everyday too. So, I started doing up cold salads, like chunky ham or chicken and a few cut up veggies. Another idea is a cold pasta salad with perhaps some cold chicken. Potato salad with chunks of ham. Perhaps and antipasto salad. Another idea might be to get a thermos. Great for hot lunches! Then he can take soups, stews, spaghetti or pasta dish. Hot dogs/hamburger in baked beans. With a thermos, the possibilities are endless!

I pack my husband's lunch for him every day. You can take salads, fruits, veggies, my hubby eats cold pizza but I don't know if you do or not. He has taken soup before and just kept it in a thermos and it kept it warm enough for him.

I'm guilty of sending boring sandwiches for hubby but when I try to branch out he complains. I do like to put some nice green leaf lettuce on his sandwiches to make them feel a little more substantial. While it's technically still a sandwich, a pocket bread sandwich is a nice change of pace. Another option for you would be a salad. Otherwise I'd look into getting a wide mouth thermos that you could put soups or leftover dinners in to keep warm.
