You know those disposable pie pans..you know the cheap made ones that come with ready made pie shells in them. Well I am a frugal person or a cheapskate, depending on your opinion. I collect those when someone is throwing them away at family picnics and family get togethers. They are cheap made and bend when filled with heavy pies. I love Pumpkin Cheesecake. I have a super recipe and it make 3 of those pie pans full. I found that when I would take them out of the oven, they would break my pies in the center. You know the grand canyon look pies! Well I came up with a solution. I tried it just now and it worked great. I put my pies on my cooling rack and put the cooling rack in the oven. When my pies were done, I just pulled out the cooling rack with my pies already on them! Set the rack on the table to cool and no broken pie. Problem solved! Remember to put a dishtowel or pot holder under the cooling rack so you dont burn your table or counter

Great tips! Mine is to substitute applesauce for oil in your cake recipes. It's a good way to make a low fat version of your favorite cake and surprisingly the cake turns out really moist.

Hey, I am the same way! I collect the pie tins too. Rather than have to go out and buy new I will wash them and save them for my baking. I love to give baked goods for gifts. The ones that love it most are the gifts received in the summer time. Who likes to torque up the oven on a hot summers day to bake? When done in the evening with the fans on it is not a problem.
