Here in Philadelphia, I have never heard the term "country chicken". Can you explain it please?
Different chickens are good for different cooking methods, so the one I choose depends entirely on the intended preparation. A broiler or fryer is very young and tender, so is best for quick cooking methods, broiling, fying, over the charcoal grill.
A roaster is larger (older--it has been growing longer) so is not as tender as the youngest (smallest) chickens. However, it is good for an hour or 2 (depending on size) in the oven with a good stuffing. It has developed enough fat to baste and make drippings for gravy. It serves a larger number of diners, too, of course.
The biggest chickens are stewing chickens. They are the oldest, usually either an old rooster who can no longer service the hens or an old laying hen who no longer lays from old age. These chickens have the toughest flesh. They also have the deepest flavor. That is why they are ideal for making stews and soups, dishes that rely on long slow cooking in water or another liquid. The cooking method also makes the flesh tender so it s more enjoyable to eat thanit would be if the old chicken had been fried or broiled. OTOH, a young fryer/broiler has not had the years and exercise to develop flavor, so it would impart less flavor to soup or stew, and the flesh would be more like ly to simply fall apart in the long, slow cook.
This is why I choose different chickens for different cooking purposes and enjoy all of them equally.

According to me country chicken is the best and not only tasty but also healthy whereas broiler is easily available but is not as tasty as country chicken. In india the country chicken is known as desi chicken.
