I need some help with recipe ideas. Please help me!

There is a group of us where I work who take turns making dinner on Wed nights to bring in and share with everyone. I'm a single person so I don't have a lot of experinece cooking for multiple people which in this case would be about 6-8 people. So far I've made sloppy joes and tuna noodle casserole when my turns came up but I'm running out of ideas. I'm looking for recipes that are easy to prepare(I'm no chef!), don't cost a fortune and are good when reheated since everything we make has to be kept in the fridge until dinner time when it gets reheated in the microwave in individual portions. We're a group with diverse tastes and we're open to trying just about anything once. So please share your favorite recipes with me!

My sister's recipe Mexican Chicken 1 can white meat chicken 1 can cream of mushroom soup 1 can cream of chicken soup 1 jar of Conqueso cheese dip Tabasco to taste 1 large bag of doritos Oven 350 degrees Reserve 20 chips. Crush rest in bag. Mix all ingreadiants together. Put in 9"x13" Pam (Spray first) Lay whole chips on top. Bake 30-45 minutes or until chips on top are browned. Serve with refried beans or tomatoes and sour cream can be doubled
