Chocolate Chip Banana Bread Recipe

I love banana bread and my husband loves chocolate so this is the solution that makes both of us happy. It is a great recipe to make and take to church dinners or Family gathering. It travels well.
Chocolate Chip Banana Bread
2 cup all-purpose Flour, (do not sift)
1 cup Sugar
1 tsp Baking powder
1 tsp Salt
1/2 tsp Baking Soda
1 cup Mashed ripe bananas (about 3 small)
1/2 cup Butter or margarine - (or you could use applesauce if you want less fat)
2 Eggs
1 cup Mini chocolate Chips (I useregular chocolate chips )
Directions:
Lightly grease the bottom only of a 9-1/4 by 5-1/4 by 2-3/4 inch loaf pan.
Set aside. In large mixing bowl, combine all ingredients except small chocolate chips; mix until just combined on medium speed. Stir in small chocolate chips.
Bake at 350 for 60 to 65 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely.

These things sound so good but I am not allowed to eat any of them!
I guess I will have to print and save this one for the kids.
But it is sooooooo hard to not partake in the labor of my love. LOL

It is a great recipe and I think that your kids would love it. But, it would be hard for me to make something and not eat it!! I guess that you have a handful of children to feed...I am sure they will tell you how it is! LOL :D I bet you are a great cook! :))

I've read a couple of your recipes and they all sound so good, your making me so hungry I think I'm going to have to eat now lol! This ounds good I'm going to make it sometime!

Another good recipe, it's very similar to the one that I use that my Mom passed on to me from my Grandmother and it sure is yummy. With our recipe we add additional chopped walnuts. I have also put the banana bread batter in a bundt cake pan and cooked it in my crockpot for two hours. It seems to be moister.

I use my bundt cake pan for breads alot also. I agree that it makes it moister but I have not used my crockpot. That is an interesting idea. I will try it.

You post some amazing recipies. I wish that I had more to add to your discussions. I really am not a cook, but your recipies leave my mouth watering, lol! Especially this one. I can't really have sugary foods, though, so I know that I wouldn't be able to have it. But I can sure dream about how lovely it would taste! ^_^

We Be Jammin' Jamaican Banana Bread
INGREDIENTS
2 tablespoons unsalted butter, softened
2 tablespoons cream cheese
1 cup white sugar
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1 cup mashed overripe bananas
1/2 cup milk
2 tablespoons dark rum, or rum flavoring
1/2 teaspoon lime zest
2 teaspoons lime juice
1 teaspoon vanilla extract
1/4 cup chopped toasted pecans
1/4 cup flaked coconut
Topping
1/4 cup brown sugar
2 teaspoons unsalted butter
2 teaspoons lime juice
2 teaspoons dark rum, or rum flavoring
2 tablespoons chopped toasted pecans
2 tablespoons flaked coconut
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Lightly grease two 8x4 inch loaf pans.
Beat together 2 tablespoons of softened butter and cream cheese in a large bowl until fluffy. Slowly beat in sugar until well incorporated. Add the egg and mix well. Sift together the flour, baking powder, baking soda, and salt in a separate bowl. In a different bowl, mix together the bananas, milk, 2 tablespoons rum, lime zest, lime juice, and vanilla extract; stir well. Pour 1/3 of the flour mixture into the butter and mix well. Mix in 1/2 of the mashed bananas. Continue with another 1/3 of the flour, followed by the remaining banana mixture, and finally the remaining flour. Fold in 1/4 cup pecans and 1/4 cup coconut flakes.
Pour the mixture into the loaf pans, and bake in the preheated oven until a toothpick inserted into the center comes out clean, about one hour. When finished, cool for 10 minutes in the pan, remove, and finish cooling on a wire rack.
After you take the banana bread out of the oven, prepare the topping by stirring together the brown sugar, remaining butter, lime juice, and 2 teaspoons of rum in a small saucepan over medium-high heat. Bring to a simmer stirring constantly; cook until the sugar has dissolved and the mixture is smooth, about one minute. Remove from heat, and stir in 2 tablespoons pecans, and 2 tablespoons coconut. Spoon this topping over the loaves while they are still warm. The topping will harden slightly when the loaf cools.

INGREDIENTS
* 1 cup shortening
* 2 cups white sugar
* 2 eggs
* 2 tablespoons mayonnaise
* 6 very ripe bananas, mashed
* 3 cups all-purpose flour
* 1/2 teaspoon salt
* 1 teaspoon baking powder
* 2 teaspoons baking soda
* 1 cup semi-sweet chocolate chips
* 1/2 cup chopped walnuts
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
2. In a large bowl, cream together the shortening and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition. Stir in the mayonnaise and bananas. Stir together the flour, salt, baking powder and baking soda. Blend the flour mixture into the banana mixture; stir just enough to evenly combine. Fold in the chocolate chips and walnuts.
3. Bake at 350 degrees F (175 degrees C) until a toothpick inserted into the center of the loaf comes out clean, about 50 to 75 minutes. Cool loaf in the pan for 20 minutes before removing to a wire rack to cool completely

Aunt Mary's Banana-Chocolate Chip Bread
INGREDIENTS
* 1 cup sugar
* 1/2 cup shortening
* 2 eggs
* 2 teaspoons vanilla extract
* 2 bananas, mashed
* 2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1 cup semisweet chocolate chips
DIRECTIONS
1. In a mixing bowl, cream sugar and shortening. Beat in eggs, vanilla and bananas until thoroughly blended. Combine flour, baking soda and salt; add to creamed mixture and stir just until combined. Fold in chocolate chips. Spoon into a greased 9-in.x 5-in. x 3-in. loaf pan. Bake at 350 degrees F for 60-70 minutes or until the bread tests done with a wooden pick. Cool in pan for 10 minutes before removing to a wire rack to cool completely.

I don't know how this one ever slipped by me because I just absolutly love banana bread. I can not wait to try this out. You have so many wonderful recipes. I think that I will try this one this weekend and send some to my son at school as he loves both chocolate and banana bread. Keep sending all these great recipes.

This is sure to be a BIG hit at my house-- I just copied it off to make it this weekend. I'm not the greatest baker but my daughter loves to bake. She's 10.. So I try to bake with her.. This one looks pretty easy and I love banana bread and she really likes chocolate..

This is a completely different way of making banana bread, id never have thought of adding chocolate or chips to it. Cheers
