Low calorie desert. Strawberry Pie. Great for Valentine's Day!

Many of us have weight loss as one of our New Year's Resolutions. This is one of my favorite deserts and it suddenly hit me that it is a perfect item for upcoming Valentines Day! For a special Valentine's Day twist one could write on top of finished pie with an icing tube...any special valentine message of their choosing! For those doing weight watchers, you can have a full 1/4 of the pie for 1 point! Enjoy! STRAWBERRY PIE Ingredients: 1 small box SF Strawberry Jello 1 small box SF Vanilla COOK-N-SERVE Pudding 2 cups water 1 quart fresh strawberries FF Coolwhip Direstions: 1. Slice strawberries, and put on the bottom of a 9" pie plate. This will be your crust 2. Mix pudding, jello and water in a pot. Cook on the stove, until a rapid boil. Take off of stove, and pour over the strawberries in the pie plate. 3. Put pie in the refrigerator and chill at least 2 hours. 4. Serve with a dollop of coolwhip!

Thanks for posting this. It sounds delicious, and I'm going to make it this week (just to be sure that it's OK for Valentine's Day, LOL). I cant' believe that 1/4 of the pie is only 1 point! I can't wait!

Yup, only 1 point! It is a great desert for just 1 point. A decent size serving. I hate the recipes that look great and you get a spoonful for 2-3 points! They taste great but you get only a smidgen. I am a volume eater!

Oh what a great idea! Remember though, the strawberries themselves are the 'crust' of this pie! But the pie would be great made in a heart shaped pan for more Valentine's appeal!

DO you think this would work with blueberries, if I maybe used a berry flavour of jello? I only ask because I have blueberries in the freezer, and I don't have any strawberries. (I can't wait until summer when i can get fresh berries again).

Sounds delicious, I can't wait to try it. I just sent it to my mom to share at work. She works with alot of people that are on diets. I'm sure they will appreciate it. I think I'll try it fo next weekend, I'll bring it to my nephews birthday party. Thanks for sharing.

Thanks for the great recipe! My dad loves strawberries and I'm trying to get him to eat. He's just finished chemo and radiation for cancer and it left him with absolutely no appetite. Strawberries have always been his favorite fruit. Since he needs the caloris, I'll use full sugar instead of SF jello and pudding. I'm all excited to make this for him now :)

Oh, I'm sorry you are having to go through the post chemo and radiation issues. I have been there on two previous occassions with relatives. It is no fun. Bless you. I hope your father enjoys the pie. It is soft and should go down easy.

It has never occurred to me to use berries as a crust, but it makes perfect sense. This looks like a great recipe. Thanks!

Thank you for posting this! I am on a weight loss program known as First Place (www. firstplace.org) and we count exchanges versus the weight watcher points. But this would be very low in exchanges also. I will have to convert this recipe and then give it a try. Thanks again!

I love strawberry pie! My husband used to buy me one for my birthday every year but I diverticulitis now and cannot have strawberries any more..boo hoo..

Good flavour and i love pie do this really tastes good and is the ingredients are good to prepare this cause i m not such a good cook as u say cause i dont cook really and i learn this and try this at home and if it taste good it ll b a great thing and thanks any way.

Oh thank you I love recipes like this. my hubby and I are trying to really count points. Except this last week hasn't been so good with everyone sick. It has been anything goes on the menu. LOL My Mom is a diabetic and my father is boarderline diabetic. They watch very carefully what they eat and do very well with their diet.
