Olives. Why are green ones in jars and black ones in cans?

We made a homemade pizza last night. Some family members prefer black olives while others prefer green olives. As I opened a jar of green and a can of black olives, I found myself wondering why they are packaged differently? Any thoughts? Which do you like best?

Now that is an interesting post, and with thought. However, I don't have an answer. I have always seen gree in jars, and black in cans. Maybe that is the way it is done in America. Good question. I'd like to know why myself. As for which one I like, well dear, I love them both.

Gee, I never gave that much thought. Now that you mention it, I have seen black olives in jars. I've seen green olives in jars. I don't think that I have ever in my life seen green olives packed in a can. I shop all kinds of bargain food outlets, fire sale, liquidations. I can't honestly remember seeing them in a can. I even emailed my mother at work to see if she had. No, she has never seen them either. Isn't that strange. I love olives, both green and black. We make cream cheese and green olive sandwiches. We have been eating them since we were old enough to eat a sandwich..lol
I found this looking for information that may tell why they are always in glass jars.
"There are several classical ways of curing olives. A common method is the lye-cure process in which green or near-ripe olives are soaked in a series of lye solutions for a period of time to remove the bitter principle and then transferred to water and finally a mild saline solution. Other processing methods include water curing, salt curing and Greek-style curing."
Maybe they are cured in the same jars they are sold? Just a thought.

Hi! In my country both green and black packaged in jar.
I like both. The black olive contains more oil.
