How do you cook eggplant?

I have never eaten eggplant, but they look interesting. How would I cook one?

eggplant - according to wikipedia.com The eggplant is used in cuisines from Japan to Spain. It is often served stewed, as in the French ratatouille, the Levantine moussaka, and many South Asian dishes. It may also be roasted in its skin until charred, so that the pulp can be removed and blended with other ingredients, as in the Middle Eastern dish baba ghanouj and the similar Greek dish melitzanosalata. It can be sliced, battered, and deep-fried, then served with various sauces: yoghurt-based, tahini-based, or tamarind-based. The eggplant can also be stuffed with meat, rice, or other fillings and then baked. In the Caucasus for example, it is fried and stuffed with walnut paste to make nigvziani badrijani.
well i tasted some baked eggplant ant its really great. most specially when it is filled up with a lot of mozarella cheese. also sometimes i tend to grill it and put some onions and tomato and a little bit of vinegar. also it tasted better if seaweeds are added.it is nice to eat with grilled stuffs and steamed fishes

I have fried them but they always soak up to much oil - how can you avoid this?

what you do is, roast in one the fire then mash it up, take a pan put some oil loads of onions tomatoats(all chopped) ginger garlic paste and put that mashed egg in it, now add salt some butter rock salt pepper and red chillies power and mix it up... its a gr8 dish

Your posting reminded me of my experience in London. I went to a restaurant and I noticed one item in the menu I found very attractive. It's called Aubergine. I've never heard of that before so I ordered one, excited to know how it tastes. The waitress came and Lo and behold! Aubergine is nothing but the humble eggplant. Obviously, it was dipped in beaten egg, added with a pinch of salt and pepper then fried. That was very delicious.

try to barbecue it and fried it coated with egg..then put a ketsup above on it..it is called "Tortang Talong" a Philippines dish.

Thre are many mouth watering dishes you can prepare out of Egg plant. The simple recipe is cut the thin slices, lenghthwise and apply the mixure of Pepper, Salt and Lemon Juice, Dry it in the sun for 5 minutes, and deep fry it oil. If you like this, let me know I will teach you yet another recipe.

One of the best ways to cook it is to make it in lasagna. Layering it with sauce and cheese and meat. You could also leave out the meat for a more veggie dish. Then bake it. It is very good and filling.

slice them thin, then fry them on the frying pan till soft, then eat with garlic bread is east way. cut then tick, put in the salt water. fry with little bit of oil, till soft, take some sambal oelek (supermarket have them) fry 2gether, put salt & sugar eat with steam rice is yummy too.

I cut mine in small thin slices. I dip it in eggs than dip it in a mixture of flour and garlic salt than fry it in a pan with butter. Same thing when I cook squash. Sometimes I make batter and deep fry the squash but never done it with egg plant.

iF YOU DON'T LIKE PAIN EGGPANNT YOU NEED----- Eggplant,salt,ground meat (pork or beef),garlic, onion, tomatoes,egg and salt to taste. *****Boil the eggplants,peel and open *****Sprinkle with salt then set aside *****Saute the ground meat with the gaelic, onion, and tomatoes. *****season with any seasoning that you want,Allow mixture to cool. Then add the egg to the meat mixture. We called that recipe (RELLENONG TALONG) here in Philippines.........
