I'm sorry, my first response didn't come out when I hit post for some reason. I found a recipe on campbells.com called cheesy chicken and rice casserole. I think it tastes great and it's fast and easy to make. You can view the recipe on campbells.com under recipes then main dish. Hope your family enjoys it :)

Tonight we are having chili and cornbread muffins. I put mushrooms and onions in the chili so they are getting some veggies. (sneaky huh?) Sometimes we have spaghetti with tossed salad, meatloaf and California blend veggies, baked chicken with wild rice and green peas, or tacos with meat, cheese, onion, lettuce, sour cream, refried beans, spanish rice, corn, tortillas and salsa. I do monthly menus for my daycare business so I have tons of menu plans!

That sounds so good and creative how you mix Greek and Egyptian food.

Stuffed Italian Mushrooms
16 lg. fresh mushrooms
6 oz. sweet Italian sausage
1 clove garlic, crushed
3 T. olive oil, divided
2 T. minced parsley
1/4 c. grated Parmesan, Romano or Asiago cheese
1/4 c. water
Wipe off mushrooms, removing stems and shopping them fine. Reserve caps.
Remove casing from sausage if necessary; place sausage in skillet with chopped mushroom stems, garlic and 1 T. oil. Cook until lightly browned, stirring to break up meat. Add another T. of oil, parsley and cheese; mix well.
Fill mushroom cavities with filling, rounding tops. Place in shallow baking pan. Put remaining oil and water in bottom of pan. Bake at 350F, 20 minutes. Serve hot.

BBQ biscuits is always a hit around here. All you need is ground beef,BBQ sauce, cheese and brown sugar.
Preheat oven to whatever temperature the biscuits that you are using calls for; fry ground beef, drain, and saturate with BBQ sauce; add brown sugar to taste; flatten and stretch biscuits to fit into muffin pan holes; place meat mixture into the middle of each biscuit; place into oven until biscuits rise; sprinkle shredded cheese on top and place back into the oven for about a minute or until cheese melts.
Best when eaten hot.
To reheat, place in plastic sandwich bag and place in microwave for about 30 seconds to 1 minute

Thanks for the tip to ask deberooney. I'll search for her recipes. :) We love potato soup around here too. I try to add some different veggies to it sometimes or I switch between using ham and bacon with it. Sometimes we jazz it up a bit more with some sharp cheddar cheese. :)

I cook a lot of international foods, and they are my family's favorites...when I lived at home, but now that I am married, my hubby has begun to like a lot of the recipes that I cook also...I would love to share them all with you, but I am going to share a quick one that is pretty easy and a mix of american style and arabic...what I did was take your average "roast recipe" and made it more heartier...and tastier. In a baking dish, I quickly chop the veggies that I like with a bit of garlic and onion...(for example, in most roasts, we use potato, carrots, and celery and green pepper...sometimes, I add asparagus, and anything else I have). Then you add peices of your favorite meat, mine being tenderized beef. I like to season them up with salt, pepper (ceyenne pepper and paprika for a kick), and all-purpose seasoning. Then you add a few spoons of oil and a bit of water, so it bakes and does not burn. Cover it up, and bake it for about 50 minutes at a reasonable temp. I cook some rice on the side and sometimes a dinner salad (rolls are optional too)...it is so easy to make and there is like no cleanup involved. I usually don't measure everything, when I am just throwing this together, but there are some recipes that I do have to. This is not one, you can add more or less of what you like, and as long as the dish is not too dry or too soggy you are good to go.(to correct dryness, add more water, and for sogginess, let it bake some more). :)

I'm sorry this is a little too late not because you've chosen the best response but it was posted 4 weeks ago. Anyway, I still want to share my favorite family dinner menu if you already haven't tried it.
Well, it's mixed vegetables (corn kernel, green peas, carrots) with baked beans. Yumm!!! I just love it.

when I lived with my parents, we were not used to have heavy dinner lunch..we preferred to have just a salad or a panino (that is similart to a sandwitch) for dinner...the main menu was left for lunch, for Sunday or Saturday lunch...well I am Italian and mu family's favourite menus are all Italian traditional dishes like Gnocchi alla sorrentina, or Pasta with ragù that is a traditional South Italy tomatoe sauce or Coniglio alla cacciatora (that is a rabbit prepared with tomatoes and onions), or lots of fresh fruit (grilled or prepared with sea water and a bit of pomodorini that is particul kind of tomatoes we have in Italy), or risotto with mushrooms (a special dish made with rice and other ingredients) or sea food and so on...

All of these dishes sound wonderful! We love Italian food and eat it often however we use chicken when a recipe calls for rabbit as rabbit is only available to use during hunting season. :) I've been told that for an American I make a great polenta. I don't understand what the big deal is about that as it's really simple in my opinion but apparently there is a knack to it and it doesn't come out just right for a lot of people?

making polenta is a matter of tradition in Italy...you are supposed to use a big copper pot..to cook it very slowly and to turn it only with a wooden spoon...it need hours to be prepared in the traditional ways and you are there turning and turning...in the end you're serving it very hot on wooden dishes...and add italian cheese...or sausage sauce and so on..

I don't own a copper pot. I use a stainless steel one and the directions on the bag. I do use a wooden spoon and stir it constantly but it doesn't take more than an hour for me to make it in the stainless steel. If there is left over, we eat it fried with sausage with breakfast the next morning. :)
