cheese, the stinkier the better!

I love a good, stinky cheese with a nice glass of red wine. tellagio, manchego, any ripe blue cheese like Stilton. I also like morbeir which is not that strong but a good accompianmint to softer cheeses. what do you think?

If you like smelly cheese, there's an English classic called "Stinking Bishop", which I've not dared try yet, but has an excellent reputation amongst foodies over here. I like the odd blue cheese, if I'm in a brave mood, but tend to stick to Stilton, Dolcelatte, Cambazola or a melty pool of Brie.
