A farmer's breakfast all in one skillet. Cooking time is 15 min. I hope you enjoy this as my family just loves it.
5 strips bacon, chopped
2 tablespoons finely chopped onion
3 medium cooked potatoes, cubed
6 eggs, beaten
salt and pepper to taste
1/2 cup shredded mild Cheddar cheese
In a heavy skillet, cook bacon until crisp; remove to paper towels to drain. In drippings, cook onion and potatoes until browned, about 5 minutes. Pour beaten eggs into the skillet. Cook, stirring gently, until eggs are set and cooked.
Season with salt and pepper; sprinkle with the bacon and shredded cheese. Let stand a minute or two, just until cheese melts. Serves 4.

Pine-Banana Shake
You'll Need:
1 can (35 cl) DEL MONTE 100% Pure Pineapple
Juice
1 cup plain yogurt or evaporated milk, chilled
5 tbsp white sugar
1 tsp vanilla extract
3 pc lacatan bananas, each cut into 3
12 pc ice cubes
Here's How:
1. Combine all ingredients in a blender.
2. Blend until smooth or crushed.

Spicy Chicken Enchiladas
INGREDIENTS
* 1 (4.5 ounce) package dry rice and chicken sauce mix with broccoli
* 1 tablespoon vegetable oil
* 1 pound ground chicken
* 3 tablespoons chopped onion
* 1 tablespoon minced garlic
* 1 fresh jalapeno pepper, chopped
* 1 (10 ounce) can diced tomatoes with green chile peppers, drained
* 1 (14.5 ounce) can enchilada sauce
* 1 1/4 cups shredded mild Cheddar cheese
* 6 (10 inch) flour tortillas
DIRECTIONS
1. Prepare the rice and chicken sauce mix with broccoli according to package directions. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a medium baking dish.
2. Heat the oil in a large skillet over medium heat. Place chicken in the skillet. Mix onion, garlic, and jalapeno into the skillet. Cook and stir until chicken is evenly brown. Mix in the prepared rice mix, diced tomatoes with green chile peppers, 2/3 enchilada sauce, and 3/4 cup Cheddar cheese. Spoon mixture evenly into the tortillas. Wrap tortillas around the mixture to form enchiladas, and arrange in the prepared baking dish. Cover with remaining enchilada sauce, and top with remaining cheese.
3. Bake 15 minutes in the preheated oven, or until cheese and sauce are melted and bubbly.

I included below one of the recipes that I make around the house quite often. I sometimes will buy the alfredo sauce just from the store & use that or I will make my own. I hope if you end up trying this dish that you will end up liking it as much as we do. Thanks for allowing me to share! xx
"Cajun Shrimp Alfredo."
Ingredients are as follows:
- 2 cups of heavy whipping cream
- 2 teaspoons of salt
- 2 teaspoons of ground black pepper
- 1 teaspoon of ground white pepper
- 1 teaspoon of chopped basil & thyme (optional)
- 1 cup of chopped green onions
- 1 1/2 teaspoons of crushed red pepper flakes (If you don't like things to hot don't include)
- 1 cup of chopped parsley
- 1/2 pound of shrimp, peeled
- 1/2 pound of scallops
- 1/2 cup of grated Parmesan cheese
- 1/2 shredded swiss cheese
- 1 pound of dry fettuccine pasta
Directions are as follows:
- Cook the pasta you have in a large pot of boiling salted water until they are done..
- Meanwhile, then pour the cream in a large skillet. Cook this over medium heat, stirring constantly, until it's just about boiling.
- Afterwards then add to the skillet the herbs, the salt, the peppers, the onions & the parsley. Simmer for 7 to 8 minutes, or at least until thickened.
- Then stir in the seafood, at least cooking until the shrimp is no longer transparent. Then stir in the cheeses, blending very well.
- Then drain the pasta, & serve the sauce over top of the noodles. ENJOY!

You'll Need:
24 pc quail eggs, hard-boiled and shelled
Meatballs:
1/4 kg ground pork
50 g shrimps, peeled and chopped
1/4 cup chopped carrot
1 pc medium onion, chopped
2 stalks green onions, chopped
1/2 cup bread crumbs
1 pc egg
Sauce:
1 pouch (115 g)Tomato Sauce
3 tbsp Banana Ketchup
1 tbsp Red Cane Vinegar
6 tbsp sugar
1 cup water
1 pc medium carrot, sliced
2 stalks celery, cut 1" long
1 pc medium red bell pepper, cut into squares
2 tbsp cornstarch, dissolved in 3 tbsp water
1 can (234 g) Fresh Cut Pineapple Chunks,
include syrup
Here's How:
1. Combine ingredients for meatballs. Season with 1/3 tsp iodized fine salt (or 1 tsp iodized rock salt) and 1/4 tsp pepper. Mix thoroughly. Coat each quail egg with 1 tbsp of meat mixture. Shape into balls. Deep fry until golden brown. Set aside.
2. Sauce: Combine first 6 ingredients. Bring to a boil. Add remaining ingredients. Cook until thick. Pour over meatballs.

My mother's porcupine ball recipe:
Take chopped onion, 1 egg, rice (pre cook this) and hamburger (use as much or little as you wish of each item). Combine them into a meatball. Brown in a skillet and drain the fat once brown. Add one can tomato soup and simmer for 45 minutes. Serve with mashed potatoes for a quick easy meal.

Zesty Hamburgers
INGREDIENTS
1 pound ground beef or turkey
4 teaspoons prepared horseradish
2 teaspoons Dijon mustard
1 teaspoon paprika
1/4 teaspoon pepper
1/8 teaspoon salt
4 hamburger buns, split
DIRECTIONS
In a bowl, combine the first six ingredients; mix well. Shape into four patties. Pan-fry, grill or broil until no longer pink. Serve on buns.
Venison Breakfast Sausage

"Homemade venison sausage for breakfast."
INGREDIENTS
1 pound ground venison
8 ounces bacon, minced
1 teaspoon ground sage
1/2 teaspoon ground ginger
1/4 teaspoon pepper
3/4 teaspoon onion salt
DIRECTIONS
Combine the venison, bacon, sage, ginger, pepper, and onion salt in a large bowl; mix well. Shape into 12 patties using about 1/4 cup of mixture per patty. Patties can either be pan-fried or frozen for later use.
Note
If you would like to start with a venison roast and grind it yourself, just cut the venison and bacon into chunks, then toss together with the seasonings before grinding and forming into patties.
Breakfast Upside Down Cake

"A mixture of all things good about breakfast. Potatoes, bacon, cheese and eggs are baked into one easy to make dish. It presents beautifully and is excellent for company."
INGREDIENTS
2 tablespoons olive oil
3 large baking potatoes, peeled and diced
1/2 cup chopped red bell pepper
2 cloves garlic, chopped
1/2 cup chopped onion
salt and pepper to taste
10 slices bacon
4 eggs
1 teaspoon milk
1 cup shredded Cheddar cheese
DIRECTIONS
Heat olive oil in a large skillet over medium heat. Add potatoes, red bell pepper, garlic and onion, and cook, stirring occasionally until potatoes are tender. Cover the pan with a lid for faster cooking.
Preheat the oven to 350 degrees F (175 degrees C). Line the bottom of an 8 or 9 inch cake pan with parchment paper. Set aside.
Fry bacon in a skillet over medium heat, or cook in the microwave, until crisp. Drain, crumble and set aside. Sprinkle the cheese in the bottom of the prepared pan. Sprinkle bacon crumbles evenly over the cheese. Scoop the potato mixture into the pan so it is evenly distributed. Whisk together eggs and milk with a fork, and season with a little salt and pepper. Pour evenly over the food in the pan.
Bake for 20 minutes in the preheated oven, just until the egg is set. Remove from the oven and run a knife around the outer edge. Flip onto a serving plate, and remove the parchment paper. Serve and enjoy.
