We spend many hours traveling over the holidays to reach our destination, by the time we get there we are exhausted. I have found that if I prepare some nice homemade foods that can be eaten on the go or at a rest stop, it helps to keep us relaxed. There is just something about homemade food that warms our souls. Restaurant food cannot compare. I often make various kinds of breads. Breads travel well and are nutritious. This recipe is a great bread to add fuel to our bodies while perking up our taste buds. Breads are easy on the stomach which is a necessity while traveling. Children and adults alike love it. If you are traveling this holiday season, grab a basket or cooler and pack a few homemade goodies. Don’t forget to toss in a few hand towels to put on your lap to keep your clothes clean. Nothing can ruin a road trip faster than spilling food on your clothes. Do you take your favorite foods on take on road trips? What do you take? Any hints or tips for us? Quick Apple Carrot Bread 1-1/2 cups peeled, shredded apples 1/2 cup shredded carrot 1/4 cup butter 1/2 tsp. lemon extract ( I use lemon juice) 2 eggs 1-3/4 cups flour 2/3 cup sugar 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1/2 chopped nuts Heat oven to 350. Grease bottom only of 9x5 or 8x4 loaf pan. Blend first 5 ingredients. Add remaining ingredients, except or nuts. Beat 3 minutes at medium speed. Stir in nuts. Pour batter into prepared pan. Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Remove from pan to cool. Refrigerate any leftovers. Makes 1 loaf.

We haven't traveled during the holidays since our family is all right here, but we are about to move away so come next holiday season, we will be traveling with two little kids. Thanks for the wonderful recipe...it sounds wonderful. I will definatly have to try it. This last summer we went on vacation and had an 11 hour road trip with the kids. I did pack some sandwiches, chips, apples and carrots, juice boxes, bananas and raisins for the kiddos to snack on. We stopped for only 1 meal on the way and 1 meal back. It saved a lot of money and it made for memories since we would pull off at parks and playgrounds on the way there and back and eat and let the kids run and play. It kept them easier to deal with while buckled in the car seats since they got to run off some energy.

Yes when I travel for a long period of time I take anything that may spoil while I am away. I pack a cooler for this very reason. This process also cuts down on spending money for fast food stops along the way. I usually take any fruits or raw veggies with a dip. Milk if it a lot and may spoil. Make finger sandwiches out of any meats in the fridge. I have an aunt who goes through her fridge and prepares items to take. She wanted to use all her peanuts, so she made peanut brittle. She had pecans and made fudge brownies. These things can be shared with the others at her destination. So she has food on the road and even nice food to offer to her loved ones when she visits.

It sounds like very good journey bread. We make trail mixes, and like hot spicy things as it keeps hubby awake. Right now my favorite bread item is made from Amish Friendship Bread starter, with pumkin and walnut added. It gets better tasting as it sits.

Unlike you, I dont need hot and spicy things to keep my husband awake. I talk so much that he couldnt fall asleep if he tried. LOL I love my Amish Bread Starter. I keep one going all the time. I bake chocolate cake, carrot cake and other goodies from mine.

Yes, home made foods are just a comforte at anytime. When we go on a vacation we take some home made snacks. It's feel good, because if you eat chips of womething you just feel guilty about eating that. But no problem with home made food. Thanks for this recipe.

I agree that chips and junk food makes you feel icky when traveling. You are welcome for the recipe. We love it and it is filling yet not too heavy for eating while traveling.

Yes, I always take a cooler full of food when we "roadtrip." I hadn't taken baked bread before, though. Good idea. I always make a few sandwiches ahead, as if we had gone to a Subway. That's for our first stop, because I know they'll stay fresh. For subsequent stops, I pack two or three kinds of lunch meat and cheese, condiments and bread, so we can make ours fresh to our liking. The "stop" takes a bit longer, but it's so much better for us than fast food. I also pack juices, water bottles, whole fruits, and cut up veggies. We always take Pop Tarts for our breakfasts when we get where we're going, so we don't waste time and money on eating breakfast out.

I would rather experience the trip better by stopping at cute little cafes or restaurants and grabbing a quick bite. It gives you a break in driving and you get to try out a lot of new foods that way

Before we leave I'll usually make sandwiches, and put a some fruit in the cooler. It is better than fast food and for us save a lot of travel time since we are not stopping.

When we head out on the road we usually just stop at a grocery store for sandwiches. You can get a fresh sandwich for not a lot of money. I have tried to make our sandwiches prior to leaving, but hubby insists on stopping somewhere along the road.

Oh yes, we load up with all kinds of homemade goodies, so much cheaper and healthier then buying food on the road. We bring the cooler and I fill it up with chicken fingers and dips, veggies and fruits. So good to eat.
