Crockpot Roast Beef/Vegetable Soup the next day recipe (2 meals in one!)

I made Crockpot roast beef yesterday, and I'm going to make Vegetable Soup today in the crockpot and I thought I'd share one of our favorite crockpot meals, which is actually meals for 2 days: 1 Roast Beef (whatever cut or kind you like) 1 can french onion soup 1 can beef broth 1 can beer (or apple juice) potatoes Cook on low for 8 hours or high for 4 hours (it will come out a lot more tender on low, but still good on high) The next day: Take any leftover meat, potatoes and juices, (if you put the crockpot in the refrigerator, you can skim off the fat) Add 1 can beef broth Add 1 can tomatoes (stewed or diced tomatoes) Add 1 bag frozen vegetables Add 1 can of water if the liquid looks low Cook on low for 8 hours Everytime I make Roast Beef in the crockpot, the next day is always beef vegetable soup! The kids absolutely love it, and look forward to the veggie soup, especially during our cold winter months in Michigan! Hope you try it!!
