Crockpot Roast Beef/Vegetable Soup the next day recipe (2 meals in one!)

I made Crockpot roast beef yesterday, and I'm going to make Vegetable Soup today in the crockpot and I thought I'd share one of our favorite crockpot meals, which is actually meals for 2 days:
1 Roast Beef (whatever cut or kind you like)
1 can french onion soup
1 can beef broth
1 can beer (or apple juice)
potatoes
Cook on low for 8 hours or high for 4 hours (it will come out a lot more tender on low, but still good on high)
The next day:
Take any leftover meat, potatoes and juices, (if you put the crockpot in the refrigerator, you can skim off the fat)
Add 1 can beef broth
Add 1 can tomatoes (stewed or diced tomatoes)
Add 1 bag frozen vegetables
Add 1 can of water if the liquid looks low
Cook on low for 8 hours
Everytime I make Roast Beef in the crockpot, the next day is always beef vegetable soup! The kids absolutely love it, and look forward to the veggie soup, especially during our cold winter months in Michigan!

Thank you so much for these recipes! I have 2 beef roasts just sitting in my freezer, so your recipes have given me the want to cook them! I've never used my crock pot because honestly, I have no idea what to put in it, but thanks to you, now I do!! I live in Michigan too, so the soup sounds wonderful!!

Glad to hear you're from Michigan too, and trying to stay warm in our sub zero temps here lately!! This recipe will definately keep you warm!! With my crockpot, I just experiment and try different things together. If the family likes it (thumbs up) we have it again. If the family doesn't like it (thumbs down) we never have it again. You are most welcome!! This is a great recipe for pinching pennies. Even if you don't have a lot of roast beef left over, the soup is still very delicious!! I use the frozen veggies for soup, and those are very inexpensive too!! I love the ease and convenience of making 2 dinners that take zero time, but are delicious in taste!! Thanks for your reply!!

That's a great idea Eiloin! I don't think you'd need to boil your vegetables before hand though, cuz they'll cook in the crockpot all day, and boiling them first might make them too mushy. I use the frozen veggies because it's just easier for me, and less time consuming. Thanks for the idea and reply!! :-)

I love crockpot beef roast for the reasons that you mentioned. I can make two meals out of it. I too make stew out of the broth and remaining meat. I love to be frugal and I feel that the crockpot helps me in this quest. I dont use frozen veggies, I use canned veggies.
