we make mang tomas salsa also for our lechon kawali & sometimes with chili vinegar commonly known " pinakurat " with chopped onions , tomatoes , soy sauce & kalamansi . we really are looking this kind of vinegar here in U.S. since our Asian supermarket here don't carry this Pinoy product from Cagayan the sukang pinakurat or kuratsoy .

I agree mang tomas sauce for lechon kawali is certainly one of the best. Have you tried a homemade lechon sauce made of liver? my friend is good at it, not close to mang tomas but it'll do just fine.

There is nothing more delicious partner to lechon kawali than Mang tomas.
I don't know about other pinoy taste but for me that is the best.

hmmm you may opt to try vinigar with soysauce wiht lots of onions.. whew.. kakagutom!
