My favorite rival teams are actually not on the choices you've given (my heart goes to Midoriyama and Shitenhouji), but if I were to choose from the list you have,I'll say Fudoumine. They are the type of team you really want to root for since you can see how much they've worked hard to reach the finals. Sadly they lost to Shitenhouji but they put up a great fight so there's nothing to be ashamed of.

Midoriyama! I don't think I've ever met a Midoriyama fan. I really wish we'd had more of an opportunity to see their dynamic in the series. I mean, on a shallow level, they were all really good-looking characters, but I also think they brought a unique element to the manga. I was kind of disappointed to see them ditched in favor of Jyousei in the anime. :\
And I'm definitely warming to Shitenhouji... :)

I think my favorite rival team -- at least for the moment -- is Rokkaku. They're the team I'd most want to play for, if I were in the series. They're easy-going, warmhearted, and have a close-knit team dynamic that really endears them to me. They're good sports, plus they obviously have a lot of fun together. Unlike the super-competitve Hyotei and Rikkai, I feel like Rokkaku plays, first and foremost, for the love of the game and the team camaraderie.
