More About Beans - Includes Mock Pecan Pie Recipe

I had a lot of people post questions about bean flour in my last bean discussion. So I thought I would give you some more info.
As Beans get old they are harder to cook. They dont seem to soften as well as the newer beans. So what you can do is grind them into flour. You can use this bean flour to thicken gravies, soups and sauces. Youca n alos make great refried bean dip by adding hot water and a little salt to taste to the bean flour. Stirring to the thicknesss desired. Beans in this form are easier to diget and this is a great way to intoduce beans in your families diet. Dry beans can be ground into flour by using a wheat crinder, grain mill or blender. Bean flour stores well in the refrigerator. you can use a small amount of bean flour to replace any regular flour called for in any recipe but i do not suggest that you totally use bean flour. You can also use bean flour in meat loaf or meat balls.
One of the most popular recipes using pinto beans is Mock Pecan Pie. it is very frugal to make. Dont tell anyone what it is made from and they will never know. It can be served with whipped cram or a scoop of ice cream. Enjoy.
Mock pecan pie
1 cup of mashed pinto beans
1 /2 cup sugar
1 cup brown sugar
1/ 2 cup butter
2 eggs beaten
unbaked pie shell
1 1/2 cup cooked beans equals about 1 cup mashed beans.
Blend sugars, eggs and butter until creamy. Add pinto beans and blend well.
Pour into 9 inch unbaked pie shell. Bake at 375 for 20 minutes. Then at 350 for an additional 25 minutes or until knife comes out clean.
NOTE: If you like you can add pecans to the top of the pie so it looks like pecan pie but this is not necessary for it will taste like pecan pie.

I have heard of bean flour, that it was better for your diet, but never found any recipes to use it for. Now I do
have recipes and I certainly will use them. Mock pecan pie sounds like a good one to start off with. I certainly will check out the other recipes found here.

there are alot of recipes to use beans with that will save you so much money while you live healthier. Hope you like the pie

Can you say toot, toot! I am going to have to try this one my dear. I do love beans and am always trying to sneak in healthier foods for the hubby to try and he loves sweet stuff.

ok my friend now I am beginning to wonder about your sanity ...lol mock pecan pie made with pinto beans ...what ??? just because it sounds so crazy I have to try this ... thanks again for the great recipes
