There are a lot of baby food sold in the market today. However, why aren't they having much choices? They usually have only few kinds of veg. Why? Is there any specific reason why they don't use richer veg. like pumpkin, zucchini, broccoli, cabbage, mushroom...?

Sometimes these vegetables are included in mixed veggie purees and things.
I was reading the jar of some organic baby food just las night. The only additional ingredient was ascorbic acid, which acts as a preservative.
I would guess that these vegetables may 'go off' faster than the other verieties that are used more frequently.
