I appreciate for this mouth-watering topic.When we talk about bamboo shoot i can't think of any other dish than a fish being boiled/steamed with lots of fresh tomatoes.I know ,not too many people may be aware of this weird kind of dish but it can't be denied that the dish would be always delectable to most taste buds.
They also dry the shoots for comsumptions in its off-seasons.When you add some of these dried shoots in your pork meat and cooked them in the garlic-ginger paste and a spoonful of bright red kashmere chilly powder,the dish tastes just as good as it looks.

Frankly speaking I don't like the smell of the bamboo shoot. But those I ate in the restaurants in Taiwan few years ago didn't have such smell and do delicious. But it's my hubby's delicious food. According to him, its unique, peculiar flavour and smell can never be found in other taste are equally nice and attractive. He likes it since young. Bamboo shoots fried with pork is his favourite dish (of course this is prepared and cooked by his sister). He said that chinese have been taking bamboo shoots for thousands of years. Many old poems did mention this dish served in occasions like the spring harvesting festival in the country.

I love it for everyday in my life. I like specially fermented bamboo shoots then the fresh ones. Especially when it is cooked with catfish!! I know people do not eat catfish much, but when cooked with fermented bamboo shoot, it taste really really good. Much more better than...er...anything.
And when mom prepares bamboo shoot with just potato and some other stuffs, it taste great too.
