Have you ever had Cheesy Bacon Tavern Chips from Applebees? I would get them all the time. They're the best appetizer ever. I was so disappointed to find out recently that they had to take them off the menu because they added a new item. My Applebees experience will be forever ruined because of this.

I know the sauce and the chip seasoning were prepackaged stuff sent from the food service supply, most everything else was stuff they kept in stock for other things.
I made a good try at making these not too long ago. I made a cheese sauce by melting a couple tablespoons of butter and mixing it with a couple tablespoons of flour to make a roux, then adding about 1 1/2 cup of heated milk. Stirred it enough until it thickened, then added a couple spoonfuls of cheese whiz, grated provolone, and grated white cheddar. Bit of salt and pepper, and it came together nicely.
I used tater tots as my potato platform. Baked them according to directions, then sprinkled a mix I made of salt, pepper, granulated garlic and ground red pepper. Then I poured the cheese sauce on them, grated some cheddar and jack and sprinkled them on top, added bacon bits, and put it in the oven to melt.
I used a refrigerated brand of ranch to mix with salsa for the dipping sauce, as I find them less tart than some of the other brands. None of them are quite as good as the restaurant variety, but you go with what you like.
Overall, the attempt was a success. My next try will probably use homemade potato chips.

Nothing will ever be as good as the ones Applebees makes. =( Really, my friend and I are so sad about it. There was one time we went to Applebees six times in a matter of eight days just for those things. Haha. We'll try making our own now.
