Ideas for food for Mardi Gras?

Mardi Gras season is about to start here in New Orleans and since I live on the parade route, my house becomes party central. I'm looking for food ideas that don't need to be heated, can be eaten without untensils, and are easy to eat on the go. Any ideas?

Little sandwiches are nice and you can put virtually anything on a crustini. Cheese Straws and other munchies of course, and maybe a veggie platter. You can also buy crawfish already boiled. If it's cold you can set out little dixie cups (the tiny water cooler sized ones) with a shot of creamy soup. I think you can even make veggie kabobs in the oven if you soak the kabob skewers and put it all on aluminum foil with salt pepper and Old Bay or cayenne. Have fun! I'll see you around, I hope?

How about fresh spring rolls, like the type you can get at vietnamese resturants. You could make them with vegitarian, or with chicken, shrimp or pork. I know a lot of asian stores sell the rice paper you would need. Also, anything on a stick....like roasted veggie kabobs (can be eaten cold), you could also add some cheese with the vegatables.
