Come on --- let's start a thread of these and get other diabetics a new leash on eating!
Here's a diabetic soup that also helps reduce chloresterol.
Beef and Barley Soup - Crockpot Style
INGREDIENTS:
1 pound LEAN stew beef, cut in 1/2-inch cubes
1/2 cup chopped onion
2 ribs celery, chopped
2 medium carrots, diced
3/4 cup barley
1 bay leaf
6 cups low fat beef broth
1 teaspoon salt, or to taste
pepper, to taste
PREPARATION:
In crockpot, combine stew beef with onion, celery, carrots, barley, bay leaf, and beef broth. Cook beef and barley soup on LOW in crockpot for 6 to 8 hours. Taste and add salt and pepper, to taste.

Bee, you gave me this recipe, I just made it last night, it is wonderful.
We had it for dinner today.
Am going to make a giant crock of it this weekend. It is a definite keeper.
To all diabetics reading this, my other 1/2 is a diabetic and when we have meals with barley, he can't believe how low his glucose is after eating, no matter how much of it he eats.

BTW - we have stopped using noodles in our chicken soup and go for the barley.
Took a crock to someone's else last night, not knowing she was a diabetic.
SHe was thrilled with her glucose level after dinner. That barley is a good thing to eat.

Thank you for sharing that, it sounds yummy.
Try this one:
Take a sweet potatoe or yam, and micro until baked. Scoop out the inside and take some of the skin, put it into a vita mix, whip with milk and 1 tbs. butter. That's it. Very healthy, and so very tasty. Blessings, M&M

Here's a yummy recipe for chunky minestrone soup with the source listed incase you want to look up some more kinds:
Chunky Minestrone Soup
Ingredients
1 tablespoon olive oil
1-1/2 cups chopped onion
1 medium carrot, halved lengthwise and thinly sliced (about 3/4 cup)
2 cloves garlic, minced
3 cups reduced-sodium chicken broth
2 14-1/2-ounce cans low-sodium tomatoes, undrained and cut up
3/4 cup water
1/2 cup long-grain rice
1 teaspoon dried Italian seasoning, crushed
4 cups shredded fresh spinach
1 15-ounce can reduced-sodium navy beans or white kidney beans, rinsed and drained
1 medium zucchini, quartered lengthwise and sliced (about 1-1/2 cups)
1/4 teaspoon freshly ground pepper
Grated Parmesan cheese (optional)
Directions
1. In a 4-quart Dutch oven heat olive oil over medium-high heat. Cook and stir the onion, carrot, and garlic in hot oil about 3 minutes or until onion is tender. Stir in the broth, undrained tomatoes, water, uncooked rice, and Italian seasoning.
2. Bring to boiling; reduce heat. Simmer, covered, about 20 minutes or until rice is tender. Stir in the spinach, beans, zucchini, and pepper. Cook, covered, for 5 minutes more. If desired, sprinkle each serving with Parmesan cheese. Makes five 1-3/4-cup servings.

This is great for diabetics and it is also great for those that do not have diabetes, much healthier. Good recipe and thank you for sharing.

That sounds wonderful. Especially with all the cold and snow outside.
Should be a good recipe for weight watchers too. I think the weight watcher diet and diabetic diet have a lot of similarities.
