White Fruit Cake
OK, I know everyone thinks they hate fruitcake, but I PROMISE this one is totally different from the "normal" fruitcake. It's delicious! You won't be disappointed if you try it. It's very festive around the holidays.
1 pound butter
2 cups sugar
6 eggs, separated
4 cups flour (including dredging)
1 ½ ounces lemon extract
1 pound mixed fruit cake mix
1 pound chopped pecans (4 cups)
1 pound seeded white raisins
Cream butter and sugar, add egg yolks one at a time. Dredge fruit cake mix, raisins and pecans and add to mixture after flour. Add lemon extract. Fold in egg whites which have been stiffly beaten. Bake at 275 for 2 hours.

Here's the quickie Chocolate Mayonnaise Cake:
INGREDIENTS:
1 - 18 ounce chocolate cake mix
3 eggs
1 cup water or milk
1/2 cup mayonnaise (Increase mayonnaise to 1 cup if cake mix has pudding mix in it.)
PREPARATION:
Preheat oven to 350 degrees F. Grease and flour two 9-inch round cake pans.** Combine ingredients with a hand mixer on low. Continue beating on medium speed for 2 minutes. Pour batter into prepared pans.
Bake for 30 - 35 minutes. Cool in pans on wire racks for 10 minutes. Remove from pans and cool completely before frosting.
** For 9 x 13 pan - bake for 35 - 40 minutes. Cool completely in pan.
** For Tube pan - bake for 40 - 45 minutes. Cool in pan for 20 minutes. Remove from pan.
Ok! Now here's my mother's Made from scratch Chocolate Mayonnaise Cake:
Makes: 1 deep 9 x 13 pan or 10 x 14 pan
Ingredients:
4 cups (950 ml) flour
2 cups (475 ml) sugar
8 tbsp (125 ml) unsweetened cocoa
4 tsp (20 ml) baking soda
2 cups (475 ml) water
2 cups (475 ml) mayonaise (I use Miracle Whip)
2 tsp (10 ml) vanilla
Preparation:
Mix all dry ingredients together.
Add water, mayonaise and vanilla.
Mix on medium or medium high for about two minutes.
Pour into greased and floured deep 9 x 13 inch cake pan.
Bake 350 degrees (175 C.) F for about one hour or until toothpick inserted into center of cake comes out clean

I like strawberry cake too. However, my all-time favorite is Chocolate cake. In fact, i love all chocolate-based cakes.
I like Chocolate Mud cake the best and whenever i feel like pampering myself or when i am up to any celebration, i will go to TGIF to indulge myself with this cake. Even though the price is a bit expensive compared to others, i willingly spend a little bit extra since i know i have never been disappointed by them. Best of all, they give free chocolate mud cake when it's the customer's birthday or anniversary.
I also always look forward to go to functions at hotels especially hi-tea because i get to eat varieties of cakes. I like other flavors of cakes too such as cheese cake, mocha, coffee and fruit flavors such as orange and banana.

I just love eating cakes. In fact, my wife and I share the same passion towards cakes though our preference is different. I can eat few pieces of cakes at one shot. I like spending time at starbucks and coffee bean not because of their coffees but because they make delicious and marvelous cakes.
Though i like eating many flavor of cakes, my all-time favorites are blueberry cake and blueberry cheese cake as well cheese cake. I am not fussy when it comes to cakes as i enjoy eating them. I also enjoy eating plain cheese cake, carrot cake and chocolate cake. My wife doesn't know how to bake cake so we buy them at our favorite shop.

Red Velvet is my favorite cake. I make it a few times a year. Its totallly homemade and not a made-from-a-box cake. My mom and grandma's recipe.
