One of my favorite dishes to prepare and so easy too is to simply pour a jar of salsa over the chicken and bake. If you have a crockpot (my kitchen saviour) it's really easy as you dump it all in and cook all day. End result is some tasty chicken that you can either serve over rice or put inside soft tortillas with fillings. YUM!

I will give you the one I saw on NDTV and tried out at home it was very tasty and easy to make.
Ingredients: 4-5 chicken legs
juice of 1-2 lemons
1 tsp ginger paste
1 tsp garlic paste
salt - to taste
pepper - to taste
2 tsp honey
oil - for shallow frying
4-5 tbsp water
a bunch of fresh lemon grass
Method: Marinate the chicken in lemon juice, ginger paste, garlic paste, salt and pepper.
Heat some oil in a non stick pan, add the chicken marinade and stir for a few minutes.
Drop in the lemon grass, mix and add the water.
Cover and simmer for about 20 mins or till done. Now add the honey, mix well and cover again for a few minutes.
Serve with a lemon wedge

You have all shared some great recipes! I don't know which to try first! It will be hard to pick a best response!
Let me share a recipe with you that is a family favorite. It is my Hoosier version of Chicken Jambalaya.
Stew 3-4 pounds chicken and remove the meat from the bones. Strain and reserve 3 cups of the broth (or add water to the broth to make 3 cups).
Mix together:
1 T minced garlic
1/2 tsp black pepper
1/2 tsp chili powder
1 tsp salt
1/4 tsp thyme
1/2 tsp oregano
Sprinkle the seasoning mixture over the chicken pieces and let sit in the refrigerator for several hours for the flavors to blend.
In a large pot, mix the chicken, 3 cups broth, 1-1/2 cup long grain rice, one small diced onion, and one chopped green pepper. Bring the pot to a boil, then cover and reduce to simmer until the rice is done.

The following recipe might not be the best in the world but I thought you might get a "blast" from it.
BAKED STUFFED CHICKEN
6-7 lb. chicken
1 cup melted butter
1 cup stuffing (Pepperidge Farm is good.)
1 cup uncooked popcorn (ORVILLE REDENBACHER'S LOW FAT)
salt/pepper to taste
Preheat oven to 350 degrees. Brush chicken well with melted butter, salt, and pepper. Fill cavity with stuffing and popcorn. Place in baking pan with the neck end toward the back of the oven. Listen for the popping sounds. When the chicken's a$$ blows the oven door open and the chicken flies across the room, it is done.

One of my favorites is so very easy.
Bake up chicken pieces (an already cut up chicken). Most of the time you can bake them on about 350 for around 45 min - 1 hour and they are almost done by then.
Mix up however many cans of Cream of Chicken soup that you desire with 1/2 can of milk per can of cream of ckn. Pour over chicken that has already cooked as stated above. Bake another 45 minutes.
Creates baked chicken with gravy. Serve with potatoes so that you can use the gravy on them. Yummy!!

here's my favorite chicken recipe that i would like you to try too. It's called chicken pastel and my mom makes it all the time for our family to enjoy. You'll be needing the following: 1 whole chicken(cut up into pieces), 4 cloves of garlic (crushed), 2 potatoes cut in cubes, 2tbsp vegetable oil, vienna sausage (preferably a small can) cut in half, 2tbsp lemon juice, 1tbsp butter, 1 red pepper (cut in strips), 3tbsp soy sauce, 1tsp MSG (can be done without), a cup of water, half a cup of milk, and salt to taste.
Saute garlic and onions in oil until brown. After that you add chicken, soy sauce, lemon juice and pepper. Cook for 5 minutes until chicken is half done. Add water. Boil and add potatoes, vienna sausage, butter and bell pepper. Cover until done. Add MSG and milk until sauce thickens. It must be served hot. If you want, you could fry the potatoes and then add it once you serve the dish. Enjoy!

this is my favourite recipe of chicken its a pakistani recipe with spices hope u like it

ingrediants:
chicken pieces 2
chili powder half tsp
salt pinch
lemon juice 2 tsp
yogurt 1 tsp
its another bbq recipe that i like in my style mix all things together in a bowl and then leave them for half hour and then grill the pieces yum they are very good in taste you will love it

Brush some olive oil and dijon mustard on chicken and bake on a bed of onions....very easy and supposedly good.
I have yet to try this one out.
