LOUISIANA CHOCOLATE FUDGE CAKE
This Creole cake recipe makes its own frosting as it bakes.
INGREDIENTS:
1/3 cup shortening
1 cup sugar
3 Tablespoons light cream
1 teaspoon vanilla
2 oz. unsweetened chocolate, melted & cooled
1 egg
1-1/4 cups sifted all purpose flour
1/2 teaspoon baking soda
1 pinch salt
3/4 cup water
1/2 cup semi-sweet chocolate chips
1/2 cup chopped walnuts
PREPARATION:
Preheat oven to 350°F. Grease and lightly flour a 9" x 9" x 2" baking pan.
1. Cream the shortening, sugar and light cream together until fluffy.
2. Mix in the vanilla and cooled chocolate.
3. Add the egg, beating well.
4. In another bowl, sift together the flour, baking soda and salt.
5. Add the flour to the creamed mixture alternatively with the water, beating well after each addition.
6. Spread into the prepared pan.
7. Sprinkle the chocolate chips and walnuts over the top of the batter.
8. Bake for 30 minutes until done.
TO SERVE:
Allow the cake to cool in the pan before slicing. Serves 6 to 8.
