I make chicken soup using a chicken carcass. Cover it with water, add some salt, bring it to the boil and then let it simmer for about 10-15 minutes. Then I strain it with a colander and allow it to cool. That makes it easier to remove any fat from the surface. Usually there will be small amounts of meat left so I pick those off so putting into my soup.
Now I cut up vegies. I like to use carrots, onions and corn but you can add whatever vegies you like. You can also add rice, barley or pasta if you want.
I reheat my broth after having removed the fat, add in the vegies and leave it to cook long enough to cook the vegies.

I just chop the chicken into small pieces then boil it in boiling water. Add some carrots and potatoes, sliced celery and a sprinkle of black pepper. Add tomatoes at the end and don't forget the salt. When serving, add chopped onion leaves, soup leaves and fried onions.

CHICKEN MACARONI SOUP
ingredients:
1 1/2 cups water
1 chicken cube
1/2 cup carrots,cubbed and pre-boiled
1/4 cup potatoes, cubbed and pre-boiled
1/2 cup cooked chicken, cubed
1/2 cup cooked elbow macaroni
salt and pepper to taste
procedures:
-In a sauce pan, plop the chicken cube into the water. bring to a boil.
-Add carrots and potatoes and season with salt and pepper.
-Stir in noodles and cubed chicken.
-let mixture boil for 5 to 10 minutes before serving to et the noodles absorb the
flavors of the soup.
-Serve while hot.
