I love loads of different guitarists for totally different reasons. I am obviously a big fan of John Mayer with his bluesy, funky, jazz take on things (a bit similarly to the Dave Matthews style without the Irish influences). But he is more of a chord shape player rather than out and out lead (which sometimes can be a lot more difficult).
I am a guitarist myself, but by no means good enough for this category! haha. Other ones I enjoy listening to are of course Clapton (he just produces quality notes and sounds, nothing incredibly fancy, but he concentrates on making each note count). Paco ofcourse for speed and technicality in his performances. Hendrix is a must on any list because of his originality and development of new sounds and experiences. Joe Satriani again is a gifted lead player with loads of great hooks and riff and technicality in his playing style. People always talk about Santana and May, but they create great individual sounds. Easily recognizable as them (and that's not easy to do with a single instrument). Same really goes for Saul Henderson (Slash). He is a great guitarist with individuality all over him.
I don't really know which to choose. It depends whether you are after technically the best, originality wise the best, or something else?
Probably Paco de Lucia dude. High speed technicality, and a crowd pleaser.

For me, it's a tie between Yngvie Malmsteen and Peter Frampton.
