One good repetoire for black is to use the Caro-Kann and Slav or Semi-Slave defenses. The reason is that they are very solid, have been around for a while, you won't get surprised in the opening too often and the pawn structures are similar, so the themes and attacking and defending lines are reoccurring.

With Black I play the sicilian opening on e2-e4;The Slave defence with d2-d4.
You could get surprised in every opening when you don't known them very well.
In the caro-Kann with white I had sometimes :
e2-e4 c7-c6 ; g1-f3 d7-d5 ,b1-c3 d5-e4 ;c3-e4 ;c8-f5(?)better is c8-g4 ;
e4-g3 f5-g6 ; h2-h4 h7-h5 ;f3-e5 g6-h7? ;d1-h5 g7-g6 ,
f1-c4 e7-e6 ;h5-e2 and black are in great difficulties.
