We've evolved over time to have different pigments of skin, different features, etc. The problem is that evolution is not instant, it happens over thousands and thousands of years. And that which isn't easily viewable is often discounted. Fortunately, science has already proven evolution, they can observe evolution of plants and species over time with documented discoveries. And, again regarding your claim that we don't have any evidence of middle species ... are you forgetting cro magnum man?
