UDP or TCP?

I've heard that some Internet applications utilise the User Datagram Protocol (UDP) for connection establishment purposes while others, such as myself, are using Transmission Control Protocol/Internet Protocol (TCP/IP). Why is this? And what are the examples of applications that are using UDP instead of TCP/IP? I also understand that UDP provides a checksum. Why?
