I have guests coming over this weekend that are vegetarians. I am trying to think of something that they will enjoy eating. I need some good vegetarian recipes please. What should I cook? I know how to make corn, collards, turnips, etc I just need to prepare a vegetarian meal that I will enjoy too. I don't like soy beans, veggie burgers and tofu.

Is the person vegetarian or vegan?
This is a big question because if the person is vegan...the person will not eat pasta that is made with eggs or eat cheese.
IF the person is vegetarian and will get pasta and cheese....try making a veggie lasagna and garlic bread. It is filling and super awesome!
But I would suggest using cottage cheese instead of ricotta. Not everyone like ricotta and the cottage cheese is not too dense.

Hi there, I am a vegetarian and I always appreciate it when my non-vegetarian friends make a special effort to cook for me. Here is a recipe for a hot curry flavoured stir fry suitable for vegetarians and vegans. It is also very healthy and a great way to get lots of vegetables in at once.
250 grams Mushrooms
2 medium sized sweet potatoes
3/4 medium sized carrots
1 medium to large sized courgette
5 or 6 cloves of garlic
1 table spoon tumeric
3 table spoons mild curry powder
2 tablepoons oil
slice the mushrooms into pieces. Peel the sweet potatoes and carrots and slice in to very thin pieces. Slice the courgette also, doesn't have to be too thin. Mince the garlic. Put the oil on to medium and put all the ingredients apart from the tumeric and curry powder in, gradually add these. Make sure all is mixed well and heat on low for about 20 minutes. Serve with quinoa or brown rice. Enjoy!

I think that the easiest way to make sure that you are covering all your bases is to cook something vegan. That means no eggs, dairy, gelatin, glycerin, meat, etc. And my easiest suggestion for that would be spaghetti! Vegetarian cooking for non-vegetarians doesn't have to be tough.
Make a nice spaghetti with some chopped up tomatoes, garlic, onion and basil. Serve with a side salad!
Another easy idea are vegetable soup. Just use vegetable broth and whatever veggies you have on hand. Chop up the veggies, cook in the broth, season with salt, pepper, garlic, rosemary and sage!
Also, you can always just serve a large salad. Bulk it up with some carrots, cucumbers, garbanzo beans, nuts and even some sliced fruit!
