Homemade Butter

Did you know you can make homemade Butter in your Kitchen Aid mixer if you have one in about 10-15 minutes. 1 pint or 1 quart of whipping cream ( let stand on counter for about 3 hrs. till room temp.) 4 cups ice cold water 1/2-1 tsp. salt Pour into mixer, attach paddle attachment. Turn mixer on speed 4-5 and watch. As cream becomes whipping cream keep going. The cream will start to get thicker and a little chunky(the butter is starting to come to gether)and look Dry. Then in a split second it will get wet with the butter milk. Shut off mixer and drain off butter milk. Add about a cup of ice cold water and wash (re-mix)the butter. Repeat this about 4-5 times until the water comes clear of buter milk.Drain and squeeze the water out of the butter and add about 1 tsp. salt for a quart or 1/2 tsp. salt for a pint,you can rewhip the butter for Whipped Butter or leave as is. Store in a container in the fridge. I now make alot of homemade Butter, my family likes the creamy fresh taste and I can control the amount of salt used. If you don't like salty butter omit it. 1 quart of cream makes a pound of butter.

What's so much fun about butter is that you can make it in almost any leak proof container as well if you are willing to work for it. When I want to impress people, I have been known to make homemade honey butter. Since I don't have a kitchen-aid (though I dream of owning one someday), I just put the whipping cream in a jar (with some honey to sweeten it) and shake away. I did not know about washing hte butter though. I will have to get a hold of my mother's mixer and try this out. There is something really special about fresh homemade butter. Thanks for the interesting post.

I'm gonna try honey butter..sounds tasty. It is important to wash the butter becuase the buttermilk can sour the butter.

I learned how to make homemade butter this way, too! They always used to do it in my elementary school classes. All you'd need is something to agitate the butter in the jar you're shaking the cream in. I haven't made my own butter in ages, though. Now I'm tempted to! The homemade stuff is just so sweet and so much more flavorful than anything you can get in the store...
