What cheeses do you use in a cheese sauce

I like having pasta with cream sauce - or vegetables with cheese sauce.
Face it - I love cheese in general!
Anyways, I like trying new combinations or new cheeses in my melted cheese sauces to give a little variety - last time I did one with some smoked cheeses which really added some different flavour.
So I figured I'd ask people here what types of cheeses they like to use in their cheese sauces, and maybe get some ideas of new ones to try for next time!

Cheddar cheese is excellent in cream sauces. I also experiment with mozzerella, smoked cheddar or swiss. I like a mixture of American and cheddar in some pasta sauces for macaroni & cheese. I like to grate some paresam cheese into cream sauces also. Sauces for pasta are so easy when you try different cheeses from time to time.
