No kids party would be complete without having a Marshmallow Slice to eat. Excellent slice recipe for work, school and charity fete's and stalls etc or even just a snack.
Marshmallow Slice
Base:
3 weet-bix , crushed (fairly fine – no chunky bits)
1 cup Self Raising flour (All purpose)
3/4 cup firmly packed brown sugar
1 cup coconut
130g butter
Method:
Melt butter and pour over dry ingredients.
Mix well and press into a lined slice tin.
Bake in a moderate oven (180C or 360F) for 15-20 mins until light brown, make sure not to overcook the base.
Allow to cool.
Marshmallow topping:
3/4 cup water
1 cup sugar
1 heaped dessertspoon gelatin
a few drops red food colouring
a few drops raspberry flavouring (optional)
vanilla
Method:
Place all ingredients in a saucepan, mix well.
Bring to the boil, and boil for 3 mins.
Allow to cool (place in the fridge for a little while if you like).
Beat well and spread over warm slice base.
Best made a day ahead this allows the base to soften.

That does sound very tasty! Can anyone translate "weet-bix" into American English? I'd like to be able to try it but I have a couple of other questions first. I can probably figure out how much 130g of butter equals. Is the pan size 8x8? The other thing I'm wondering is if the gelatin is unflavored? I appreciate any help that someone can give! Thanks.

Hi.
Weetbix is an Aussie breakfast cereal, its compressed wheat which is similar in size to a snack bar, but you have it in a bowl with milk and sugar. www.weetbix.com.au/
You would be able to use Bran Flakes or Wheat Biscuits instead. If you choose to use the Bran Flakes, dont crush them up, just break them down in size.
130g is approx 4oz (100 grams=3.5 ounces)
The pan size I use would be about 8x8.
The gelatine is unflavoured.

That would be great if you could let me know. Im very interested to see how it would turn out using the US substitutes.
If you or anyone else ever has a problem converting or need's an Aussie food ingredients description or other your welcome to add me as a friend, send me a private message and I'll help you out as much as I can.
I know our Rice Bubbles are the same as your Krispies. So if I post a recipe using Rice Bubbles and forget to mention the alternative, sorry about that.
