Bread Pudding III

"Awesome bread pudding with fresh apples and cream! Best served hot with ice cream
INGREDIENTS
2 apples
8 cups bread cubes
3 eggs
1 cup half-and-half cream
1 cup white sugar
1/2 cup milk
2 teaspoons ground cinnamon
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Peel, core and cube the apples.
Lightly grease a 13x9 inch baking pan. Cover the bottom with half of the bread cubes and then sprinkle on half of the apples. Repeat with the remaining bread and apples.
In a large mixing bowl combine the eggs, cream, sugar, milk and cinnamon; beat well. Pour this mixture evenly over the bread cubes and apples.
Bake at 350 degrees for 35 minutes. Serve hot.

Change to: servings US Metric
1 tablespoon vanilla
1 cup brown sugar
3/4 cup water
4 tablespoons butter
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup sugar
6 cups milk
4 egg yolks
1 1/4 cups flour
Combine first 5 ingredients and heat to boiling.
Add soda and boil a few minutes longer.
Add 5 cups milk, slowly.
Reserve 1 c.
milk and mix with sugar, egg yolks and flour.
Pour this into the cooked mixture slowly, and cook and stir until thick.
Serve warm or cold, plain or with whipped cream!

Found this on the Internet posted by Thelma McKinney. Both the pudding and sauce are made in the microwave. I am on a diet now but this is here for a reward when I reach my goal! Enjoy!

Bread Pudding
2 tablespoons butter
2 eggs
1 cup milk
1/8 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cups French bread, day old, cut into 1-inch cubes
1/4 cup raisins
Bourbon Sauce
1/2 cup sugar
3/4 cup water
2 tablespoons bourbon (or rum)
1 tablespoon cornstarch
2 tablespoons butter
For the bread pudding, in a 1 quart casserole, micro-melt the butter for 30-40 seconds.
Add eggs and beat well.
Blend in milk, sugar, raisins, vanilla and salt.
Stir in bread cubes and let stand for 5 minutes.
Gently stir the mixture and micro-cook, uncovered until set, about 5 1/2 to 6 minutes, stirring after 3 minutes.
For the bourbon sauce, in a 4 cup, glass cooking container, stir together the sugar and cornstarch; stir in water.
Cook, uncovered, until thick and bubbly, about 3 minutes. Cook 1 minute more and stir in butter and bourbon or rum. This makes about 1 1/4 cups sauce.
Serve the warm bread pudding with this sauce.

I came up with this tonight at 1am, had just wound up my first assignment, was in the mood for a midnight snack, but ended up making a delicious pudding I think it'll be a real nice one for X'Mas and New Year or any other occasion as well.

1 tray 30 min 30 min prep
Change to: tray US Metric
1 can Nestle sweetened condensed milk
2 cans Nestle cream
1 tablespoon cocoa powder
10-15 Marie biscuits
maraschino cherries or glace red cherries or chocolate chips or bourbon biscuits (for garnishing)
Mix milk and cream together in a large bowl.
Beat extremely well for 3 minutes on medium-high speed.
Add cocoa powder and whisk it really well.
Now, very carefully, pour the milk-cocoa-cream mixture on a flat tray, spreading it gently and neatly in the tray.
Add the biscuits over the mixture just spread, in a neat manner.
Pour the remaining milk-cocoa-cream mixture over the biscuits.
Garnish with the cherries/biscuits/chocolate chips/ grated dark chocolate.
(I put one glaze cherry chopped into 2 halves i. e. just 1 half over each biscuit).
Cover the tray with another bigger sized tray.
Chill for minimum 2-4 hours and serve!
Be sure to lick the mixture bowl clean.
If you want to add some creativity into it, you can cut the biscuits into different shapes, like circles, triangles, squares, diamonds, half moons,etc.
If you have kids at home or are planning to invite them o'er, tell them Santa has hidden some secret"goodluck" in the tray.
That way it'll be an extra dash of excitement watch them try to hunt for the biscuits and finish up the pudding sooner than you could imagine.

Make sure your bread is completely soaked and covered in the liquid, it stops it from drying out. I place sugar on top of the pudding after its nearly baked, so it doesnt turn into burnt caramel, and it gives the crust/top a nice crunchy flavour.
A quick and easy bread and butter pudding that tastes great.
6-8 slices bread, crusts removed
3 eggs
3 tablespoons caster sugar
300 mL cream
Apricot jam
Cinnamon
Preheat oven to 180C (360f)
Spread the bread with apricot jam and sprinkle with cinnamon.
Cut the bread into triangles and arrange in a greased oven-proof dish.
Whisk together the eggs, sugar and cream.
Pour over the bread and bake for 25 minutes.
Recipe notes
You can substitute the apricot jam for any jam of your choice. I often use strawberry jam.

Bread and Butter Pudding Recipe
Half a cup of sultanas or mixed fruit
3 tablespoons of brandy
8 slices fruit bread or wholemeal bread slices
Butter or margarine
5 eggs
500ml of pouring cream
700 ml milk
2-3 tablespoons of castor sugar
1-2 teaspoons of vanilla essence
Nutmeg
Pre-heat oven to around 160…(moderately slow). Soak the sultanas in the brandy for a couple of hours.
Cut most of the crusts off the bread, butter, and cut into 3 strips per slice.
Beat the eggs with the cream, milk, sugar, and vanilla.
Place the bread strips in layers in a large baking dish (don’t worry how many layers there are), sprinkling some of the sultanas across each layer.
Pour over the egg mixture, and sprinkle with nutmeg.
Place this dish is a larger one half filled with water and bake for about an hour, to an hour and a quarter.
You will know if it’s cooked sufficiently if you insert a skewer or thin-bladed knife into the pudding and it comes out relatively clean … without any runny liquid on it … bon appetit!
