Can you make home-made pasta?

Yesterday one of my friends left here some beautiful words for me and my country..I am from Italy and she told me she likes reading posts like some of mine full of information about my country. I do agree with her that is interesting sharing our different background!! Then here I am...
Can you make home-made pasta? Pasta is one of the most famous Italian food and I like doing pasta at home....I mean I like making pasta...I can do TAGLIATELLE but I am very very good at making GNOCCHI, that is a particular kind of pasta made from potatoes, flour, a bit of butter, and water.
I like serving GNOCCHI ALLA SORRENTINA, that is with MOZZARELLA (our famous particular cheese!!) and tomato sauce.
And what about you? What kind of pasta do you make?

I'm from Trieste but now I live near Milano. In my family my grandmother is the best cook hehe I've learn from her many recipes. But we're austrian-hungarian so our recipes are very strange, not mediterranean.. Now I can learn mediterranean recipes from my mother in low :D

When I was young, my father used to dedicate entire Sundays to making pasta from scratch. We would put the flour on a large pastry board, make a well in the middle of it, add the eggs to the well, and then go at it. We would start with a fork to incorporate the eggs and would then end up kneading the dough with our hands. There were times when he even made us roll the dough out ourselves and make think flat noodles by just rolling it up and cutting it with a knife. Words cannot tell you how happy I was when he came home with a pasta roller one day. Then we would allow the pasta to dry a bit before eating with my mother's fresh sauce. We even tried making gnocci once and we rolled each one out along a fork to create little lines for the sauce to cling to.
It's funny because when I think about what we did, I remember how much work it was, but I also remember how much fun it was. My father is very proud of our Italian-American heritage and he would tell us stories about his grandparents in New york while we worked. Now it's become a pretty fond memory.

oh I don't know how to properly say it in English but in Italy we would say that Hai catturato il senso di quello che volevo dire, guess it is something you got the right meaning of what I wrote...
making pasta is a matter of hard work, sometimes even tiring or boring, but I can remember all the fun we had while preparing it in our family...when I was a little child, my grandmother used to come and visit us on Sundays and she and my mother started preparing and we children were allowed to "help"..it was a joke for us...but it was above all a lesson of love and care..and while joking we were left with this ability...making home-made pasta....and we were left with all these beautiful memories..

The pasta for my husband are OK for my son some kinds but me and my brother we can live just eating any kind of pasta.So when I hear from you about the GNOCCHI (I didn't know it before) I make some search and I find a recipe.I'll try make it and of course the first time the tester will be my brother.If he stay alive(don't worry I'm very good cook)I'll give the rest of the family.So this post is open invitation for him.I sent for you the page with the recipe for your advice as a specialist and if you have time why not a recipe of yours will be perfect. http://www.cookingwithpatty.com/Pictures/gnocchi/potato-gnocchi.php

i had a look at the recipe...I am sure illustrations make it easier...as I told someone it is difficult explaining something that is better showed...anyway, I think it a good recipe...generally you have to use 500gt flour and 500gr boiled potatoes but I am used to add as much flour as it is needed..I mean while working all together you add flour if it is too...weak...I am used to adding a bit of butter to the mixture(potatoes plus flour) and of course a bit of salt that I add when boiling potatoes...I use my own fingers to prepare each gnocco and not the fork but you can use the fork as well...for the tomato sauce I've tried to explain how to prepare it in another comment ...hope it is clear enough...let me know if I can do something more for you...and have a nice try with your gnocchi...

No, my cooking skills are very limited, which makes my diet rather repeatative but I eat lots of fresh vegetables so perhaps it is better than some peoples

you made me smile...thank you for these words...it is a bit difficult to explain because you should both know how an Italian tomato sauce is made, you should have mozzarella and then I should teach you how to make gnocchi...you see it is a manual job and it is more easily showed than written...maybe you can come to Italy and I would be happy to cook for you ...LOL

I like to make Gnocci too, but with pumpkin instead of potato. I like to serve that with a tomato sauce. I have made spaghetti, but finding a suitable place to hang it to dry is difficult. I've seen these little wooden contraptions for hanging up pasta to dry on tv programmes. They look really useful. I've also made some pasta that looks like "belly buttons", but I can't remember the Italian name for them. They looked good lol.

Yes, i like pasta.But,i ever not eat italian pasta.I like chinees pasta.And also,ivery very much like chinees food like haksanoodals,manturian etc.

well, I like some chinese dishes...but of course the dishes I can taste here in Italy are very far from being the real Chinese food...it is like tasting Italian food in Italy and in another country..anyway I like some chinese dishes but I hope I can come and visit China one day and taste it there or I have to find a Chinese friend cooking for me

I love making homemade pasta! Just yesterday I made to batches of Ravioli stuffed with chicken,spinach and ricotta cheese and froze them in packaged sized meals for us.I also make homemade spaggetti, fetteccini and a Hungarian noodle Tarhonya. I really enjoy making it.

I don't make pasta, but I love gnocchi. I can buy it here at local Italian store. I also like spinach fettuccini with Alfredo sauce. I love fresh Mozzarella with Fresh tomatoes.

hi my friend nice to hear from you again...well, I'll have to cook for you my gnocchi, then!!! Alfredo was one of the most famous restaurants here in Rome and he was called the king of Fettuccine!!!
As mozzarella is concerned, I come from the south of Italy where they produce the best mozzarella of ever...wish you should taste it...

I've seen on tv how gnocchi is made and it always fascinates me.IT sure does require patience and time. I love to eat pasta but have never made it at home. At any given time I have atleast 3 types of store bought pasta packets at home..my favourites..farfalle, penne and the shell shaped ones. I made pasta today in the noon for lunch using the screw shaped ones (I had a little of that left over from last time) It's great to know you make pasta at home maribea. Do tell me how to make GNOCCHI ALLA SORRENTINA, because I've seen how Gnocchi is made (on the board)I also have mozzarella in my fridge. would love to try it.

hi my dear...Gnocchi alla sorrentina means that after preparing gnocchi you serve them with a tomato sauce and mozzarella...you have to prepare the tomato sauce...put a garlic and a spoon of oil in a pan..when the garlic start to fridge low the gas and put your fresh tomato sauce in the pan (I use to make it on my own!!) and when the mixture starts boiling add just a bit of salt...then you have to cook all the sauce little by little..time is needed to make it like a creme (it is difficult to explain ahd I hope I am clear enough!) when turning the sauce please use only a wooden spoon. add some basil in the sauce to give it a wonderful smell...then you need a pottery pan...put some spoon of sauce then add gnocchi then sauce again and have it all mixed together...then cut the mozzarella and put it on the gnocchi...add a bit of Parmesan cheese, basil again and put in the oven until the mozzarella is cooked and you can see all boiling!!! then serve very hot and have a nice meal!!!!

Oh that was lovely of your friend, it is very nice to read information about other countries. Oh yes I can make home-made pasta, but I must admit Italian make it the best!! I am not saying this just because you are Italian because it is a fact. I am not sure what it is called sorry but I have it in my recipe book.

yes, i can make home made pasta and i love to cook at home.. i can even do some dish that you can never imagine that a simple guy like me can do..
