I have played many shooting games. My 3 favourites in the order of preference are:-
1- Half Life(A very intelligent game)
2- Quake3 Arena(No intelligence in this one, raw power, blood and girb)
3- Unreal Tournament(Beat the stuffings out of your opponent or get your stuffings extracted!!)
