Traditional Scottish Shortbread

I noticed there were quite a lot of people giving out recipes on the site and I wasn't quite sure if there were many Scottish people here so here is a Scottish recipe, This is a sweet biscuit . xx
Ingredients: 6oz Plain flour
4oz Soft butter
2oz caster (granulated) sugar
1 oz cornflour (cornstarch)
Method: Mix the butter and sugar together (preferably with a wooden spoon) until it is pale and creamy. Sieve both the flour and the cornflour into the bowl and mix well. Put a small amount of flour on your working surface and place the dough on this. Shake a little flour on top and roll out about quarter inch thick. jab with a fork and cut into rounds with a cutter or, if you want one large shortbread round, pinch the edges with thumb and finger all round.
Use a palette knife to lift the shortbread onto an oiled baking tray and bake for 25 minutes in a pre-heated oven at 325F/170C/Gas Mark 3. If the biscuits are ready, they will be pale brown and crisp; if not, return to the oven for 5 or 10 minutes. Shake a small amount of caster/granulated sugar on the top of the shortbread immediately after they have been removed from the oven. Use a palette knife to move them to a cooling rack and store in an airtight tin once they are cold.

I am from Peebles, near Edinburgh, but have lived in Australia for many years, and your recipe sounds very much like how my mother used to make shortbread, and it was delicious. I will try your recipe and find out!

Hi weemam, well I have not had them in years and I love them and they do not sell them in Shops. Will you make me a Batch and post them to me, please,lol. My mouth is watering here now. Its ok I will still eat them if they have been crushed lol. No seriously I love the Home made ones , they are out of this world.
No I can't bake lol so I will not attempt it, knowing me I will burn them or set the Cooker on fire.

Thanks for the recipe. I like to bake, espeically things that are very easy. I do not eat a lot of shortbread, so I am not sure what to do with it, after I have baked it. Should I just serve it by itself, such as for breakfast, or add something with it? I realize that might seem like a crazy question, but I am raised in a generation of cookies, cakes, ice creams, and candies. It is rare that we eat anything that is not store bought, and even if it is baked out home, it is usually cookies and cakes.

Ok, I made some, and I have to say, they were pretty good. I made some macaroons too, and my hubby ate those mostly, but, I guess he will have some of the shortbread tomorrow, with his coffee.

Oh dear Weemam, I love scottish shortbread, I have not had this for years, since where I used to live and our next door neighbours were from Scotland the lady was elderly and I used to call her Nanna from Scotland, and she used to make this but I never knew how until today so thank you very much I really appreciate it.

Oh I hope this tastes as good as it sounds. I have been looking for a good shortbread recipe for years and have yet to try one that actually tastes like shortbread.

Well thanks very much for the extra five pounds that are going to magically appear in the next few weeks I will have a brand new person to blame. The bakery down the block is sick of me blaming them. No honestly it is a beautiful recipe and every Christmas I make shortbread and distribute it around the building instead of Christmas cards. This year I was away for the month of December and they still are asking when the shortbread will be delivered. I have a butter tart recipe that I am also well know for. will post it some time.

Thank you thank you thank you for this recipe. I've been looking for a good one for ages. Both myself and my partner like Scottish Shortbread. Probably me more so, because with me having been born and brought up in the UK, it was far mor readily available there than it is here in Canada.
I absolutely cannot wait to try this recipe out. Thanks so much for sharing with us.

Well weemam, I am of Scottish descent but don't know anyone there so this is wonderful of you to share these recipes with us! I am looking forward to trying them. I've never tried homemade shortbread before but I love to bake and knowing that this is an authentic Scottish recipe will make it taste all the better!

Thanks so much for posting this authentic recipe. I'll definitely be trying it out for a taste of home now I live abroad (assuming I am allowed to, being from South of the border!) :)
