Great Rice Dish

Here is a recipe for a great rice dish, the tomatoes really burst in your mouth!!!
1 package of Whole Grain rice (such as Uncle Ben's)
1 Green Bell Pepper
1 Purple Onion
1 package of Cherry Tomatoes or other small tomatoes
Olive Oil
salt and Pepper for tasting
Make rice according to package directions. While rice is boiling, cut bell pepper and onion in strips. Sautee in 1-2 tablespoons of Extra Virgin Olive Oil. About a minute or two before sauteeing complete, add tomatoes (I diced in half). Add rice to veggie mixture and stir.
This is really good, even my husband enjoyed it. It has a Mediterean taste to it, the tomatoes just burst from the flavors. Delicious.

That sounds delicious! Have you ever tried using canned tomatoes or only fresh ones?

I've only used the fresh ones, the tiny cherry tomatoes. I'm sure you could add a can in there.

I most definitely prefer fresh tomatoes, (or any fresh produce) but when they are out of season they don't taste that good and they are expensive! I use canned tomatoes in alot of cooking. My children love them. Maybe I will try out your recipe and let you know how it goes with the variation!

Thanks so much for this recipe. I love rice and am trying to find new ways to serve it (without gravy!!) This sounds great and would be an excellent side dish to many meals!

It's a great dish. I made it with chicken that I sauteed in olive oil. I marinaded it in Lawry's Terriyaki Marinade before hand, it was so good. You can also dice the peppers and onions and it turns out just the same. I usually dice them because I have a picky husband, if he sees them, he won't eat them...LOL
