Great Rice Dish

Here is a recipe for a great rice dish, the tomatoes really burst in your mouth!!! 1 package of Whole Grain rice (such as Uncle Ben's) 1 Green Bell Pepper 1 Purple Onion 1 package of Cherry Tomatoes or other small tomatoes Olive Oil salt and Pepper for tasting Make rice according to package directions. While rice is boiling, cut bell pepper and onion in strips. Sautee in 1-2 tablespoons of Extra Virgin Olive Oil. About a minute or two before sauteeing complete, add tomatoes (I diced in half). Add rice to veggie mixture and stir. This is really good, even my husband enjoyed it. It has a Mediterean taste to it, the tomatoes just burst from the flavors. Delicious.
