Roast Potatoes how do you make yours?

How do you make your Roast potatoes, recently my four year old son has started pulling a face at his roasties,, and they use to be his favorite, i want to jazz them up a bit, so how do you make yours? don't really fancy roast pork and chips for my tea tomorrow, please can you give me some suggestion.
