How do you make spaghetti / pasta sauce?

I fry some garlic and onion in a pan, add minced beef. As it starts to brown I add nutmeg and several other herbs and spices. Add 1 tin of pureed tomatoes and a jar of Dolmio's Red Wine sauce and heat until hot.
Does anyone make the sauce from scratch?

I adore spegetti.
I make it from scratch. I buy canned tomato sause, and whole ripe tomatos, Vine ripened taste the best. I then cube the tomatos and put them in the sause, i use a garlic mincer to chop up fresh garlic 2-3 cloves. Saute it in a pan then put that in the sause. I add seasonings, generally i grow and dry my own herbs, i think they taste better, so i use a pestle to grind them up. I add oregeno, parsley, basil, thyme, onion ( fresh is good too ) and a few tablespoons of sugar. I put in fresh mushrooms, and a few bay leafs! Depending on how big your pot is. I use the biggest pot i can find, i like to freeze extra.
I fry up some hamburger with garlic, salt, and oregano. Put that in the sause, Fry up some italian sausge with basil and thyme and add that in too. I simmer until im ready.
I love to experement with different pastas to go with the sause.
Anyway thats basicly it as to how i make spegetti.

I i forgot, i use tomato paste and some black and red pepper in it as well.

My sauce isn't totally from scratch, although I have done it before. I use a cheap jar of store label sauce, add garlic & herb seasonings, bay leaves, brown sugar, ground beef and ground sausage and let it all simmer together. We like our sauce without the bite of the tomato, so it comes out pretty sweet. We havent' found any jarred sauces that are even close to what we like, so this is the easiest way to do it.

I'm really lazy. I take a can of plain tomato sauce/paste/ spaghetti sauce if it was on sale, add some fried onions, mushrooms, and peppers, mix it all up and pour it over the noodles.

Southern-Style Meat Sauce
INGREDIENTS
* 3 tablespoons olive oil
* 1 onion, chopped
* 4 cloves garlic, chopped
* 2 pounds ground beef
* 2 (6 ounce) cans tomato paste
* 2 (15 ounce) cans tomato sauce
* 4 tablespoons dried oregano
* 4 tablespoons dried basil leaves
* 3 teaspoons Worcestershire sauce
* 2 tablespoons sugar
* 2 tablespoons red pepper flakes
* 2 (4.5 ounce) cans mushrooms, drained
* 2 bay leaves
* 2 tablespoons salt
DIRECTIONS
1. In a large pot heat olive oil. Add onions and simmer on medium heat until semi soft; stir in garlic. Be careful not to burn. Add ground beef and cook until all pink is gone; drain.
2. In pot with drained beef, gently stir in tomato paste and tomato sauce. Mix in oregano, basil, Worcestershire sauce, sugar, red pepper flakes, mushrooms, bay leaves and salt; bring to a boil. Turn heat down to low and simmer for about 2 hours.

I prefer homemade spaghetti sauce, and so do my kids.
We fry some onions and garlic, add the mince. Add a can of tomato soup and sometimes canned tomatoes or fresh ones and half a can of water. Then add some mixed herbs, worsteshire sauce and tomato sauce or tomato paste.
Simmer for an hour till the water has evaportated a little, then thicken with cornstarch.
Hey presto its done...
