I secure my pickles by getting them from the supermarket shelves. They stay fresh and crunchy for hours even if I have cut them into the pieces I desire to have them. Maybe those pickles you encountered and wish to have were taken from the supermarket shelves, too.

I've never made pickles but from what I remember if you want them to be crunchier and fresher then you have to use a cold pickling method rather than a hot one. You might want to check out www.foodnetwork.com for pickle recipes.

here are some recipes for you
Refrigerator Pickles
These pickles are wonderful for busy people. No need to can. My husbands grandmother gave me this and they are just great whole family loves them.

6 cups 25 min 20 min prep
Change to: cups US Metric
6 cups sliced cucumbers
1 cup sliced onions
1 green pepper, chopped
1 cup vinegar
2 cups sugar
1 tablespoon salt
1 tablespoon celery seeds
Heat vinegar, sugar, salt, and celery seed.
Pour over cucumbers, onions and green pepper.
Store in refrigerator.
These will keep for many months.

Lime Pickles
This recipe came from a next door neighbour, who was East Indian. I found these pickles interesting. In comparison to other recipes for lime pickles they seem alot alike.

1 large jar 12 days 6 days prep
Change to: large jar US Metric
20 limes, cut into quarters
1/2 cup rock salt
1 1/2 teaspoons turmeric
100 g chili powder
25 g ginger, sliced
20 green chilies, topped and slit
1 teaspoon fenugreek seeds
1 teaspoon anise seed
1/2 teaspoon onion seeds
2 teaspoons vegetable oil
2 teaspoons sugar
1/2 teaspoon asafetida powder
In a large glass bowl place limes.
Toss well with salt and turmeric.
Add ginger and green chilies.
Toss well to coat evenly.
Set aside for 4 days.
Heat oil and add the asafoetida.
Allow to cool.
Crush aniseed, fenugreek into mix.
Add remaining ingredients to the lime and shake well.
Allow to stand for 2 days.

Curry Pickles
The curry gives the pickles a very interesting taste.

3 pints 25 min 15 min prep
Change to: pints US Metric
24 medium cucumbers, sliced thin
1/2 cup pickling salt
2 quarts water
1 teaspoon curry powder
2 1/2 cups vinegar
1/4 cup prepared mustard
1 teaspoon celery seeds
Put the cucumbers in a bowl, add the salt and water, and let stand for 5 hours.
Drain and rinse the cucumbers well.
Combine the remaining ingredients and bring to a boil.
Add the cucumbers and heat just to the boiling point.
Pack into hot jars and seal.

i love pickles also but iam so sorry because i dont know how to make piclkes
