Have you ever cooked for just one person? It is rather difficult and it just does not seem to taste as good as when you prepared a larger pan of the same food. I sometimes think that you need someone to share food with before it tastes good. Then again maybe food just needs to be prepared in larger qualities to have a wonderful taste. For whatever reasons, I dont like to cook for one personnor do I enjoy eating alone.
We used to take care of my Hubands GrandFather in our homefor seven years. He ate meals at odd times. One of the things that he enjoyed was a good omlet. I found that it is possible to make a wonderful tasting omlet in the microwave. It is quick and easy and tastes great.
Here is the recipe for 1 mug:
Omelet in a Mug
2 egg, beaten
2-3 TBSP shredded cheddar cheese
1 TBSP diced cooked ham
1 TBSP diced cooked bacon
1 TBSP diced green pepper
small amount of shredded cheese
salt and pepper to taste
Combine all ingredients in a small bowl; mix well. Spray a
microwave-saft mug with cooking spray. Pour in egg mixture. Microwave, uncovered,
on HIGH for 1 minute; stir. Cook 1 to 1-1/2 minutes longer or until eggs are completely set.
You can use any of your favorite omelet ingredients - the ones
listed are just suggestions
When you microwave the second time, check after 1 minute. I found that 1-1/2 minutes might have been just a little too long in microwave. It will depend on your microwave

I can put this in a mug and nuke it after I get to work, if I am running late. I knew you could make scrambled eggs in the microwave as long as you added some fat, but I really like this idea a lot. I always have some of that stuff on hand.

Yes, you can make it at work and it is quick. That would sure be a life saver if you are running late. Good luck. Be sure to let me know how you like it.

I eat alone most all the time, and it's okay. But, then I have to make dinner again, when my husband gets home. His hours keep changing and he comes home too late for me to wait, I get sick.
Thank you for the receipe.
Have you ever made an omelet with zuccinni and onions? It is outstanding.

Yes I do every Day as I live alone lol. But I normally make more and then freeze the rest, that way I just have to get it out and stick it in the Microwave that is of course if I am able to freeze it. It is mainly Stews and things like that I freeze.

yah, i cook for myself all the time. i live by myself in a student dorm, so i dont really have anyone else to cook for. sometimes we have group dinners, so those are the only times i ever cook for anyone else. i dont really like eating in front of people, so i think i prefer eating alone!! i never really use recipes. if i want to make an afghan dish, i usually look at the recipe quick online, then just make the dish however i want to. but i think im actually a pretty good cook!! ive never really made anything bad. the only time was when the lid came off the salt shaker and wayyyy too much salt fell into the pot..oops!

Annie, Microwaved scrambled eggs are my favorites! They are so light and fluffy and I like to get them out while they are still a little damp and before they turn to rubber. My only problem is how to you clean the mug or bowl you fix them in? Even in my tupperware mugs and bowls I still have a problem, not as much, mind you, but the egg still sticks a bit. I have tried the fabric softener trick and everything else I can think of; but still cannot find an easy way (other than harsh brillo scouring pad) to clean up after making this. ~donna

My husband works out of town a lot and at times he dont come home untill very late. So I have to eat by myself, and its hard to always just to cook for one person, so I usually just go out to eat. But now I can make me a good omelet at home just for me. thanks for that recipe .

I don't mind eating alone, but I don't make a "full course meal" when I eat by myself. Usually, I will make a hot or cold sandwich, or eat salad, or cereal, or breakfast..lol On a rare occasion i may make a open roast beef sandwich, if I still have roast leftover from another meal. Or a meatloaf sandwich or grilled cheese and soup.. Usually depends on my mood, or how hungry I am, or how big of a mess I feel like cleaning up afterward. I don't often get the chance to just feed me and no one else, and sometimes it is a welcome change to not have to worry about cooking for others.

I used to eat alone a lot because my husband would be working second shift and I didn't like it much at all. It was hard for me to come up with a decent meal when I was just cooking for myself. Basically I ate my supper from a can or wouldheat up some type of frozen food in the microwave.

Eating alone is not fun even with a book or tv show. I can't do it without one of those. I have not managed to cook for one or two. I always cook regular meals and then freeze or refrigerate in single serving containers so I have them when I do eat alone or they are great for taking to work for lunch.

Hi, you might want to check out the following books:
Solo Suppers: Simple Delicious Meals to Cook for Yourself by Joyce Goldstein
Cooking for One (Quick and Easy) by Christina Kempe
You can find them both on Amazon.com
If you do a search on Amazon for "Cooking for One" under the Books tab, you'll find a lot more suitable recipe books.

Food just dont taste the same when prepared in small qualities. I dont know what the difference is. If you lived close to me, I would invite you to dinner with us.

Sometimes I prefer to eat alone because I can make just what I want in how little or how much I want. My son is an adult but very fuzzy. He will not eat what he doesn't like. When he was a teenager he would tell me I am not eating that crap. So most of the time he makes his own meals and I make mine. Sometimes I cook for us the things he does like but doesn't know how to make and he cooks for me when I am not feeling well. But even if I cook him what he likes often time he doesn't eat it, if it is not cooked exactly to his requirement, he lives it there. Other times he is not hungry enough and so won't eat. Just last week he wanted a shepard's pie, I made it and he took two bites and didn't want anymore. I asked him, what is it not good? He said, it taste good, but I just can't eat right now, I don't really have much of an appetite. But seeing him not eat puts a damper on my eating. I don't enjoy it as much. Later that evening I noticed he ate it and not only that by the next day he had finished the pot.

I don't like to eat alone. Usually me and my hubby eat our dinner and lunch together. But sometime he goes for lunch in University's seminer or their lunch with guest. At that time I have to cook for me alone what I don't like at all and also I feel lazy to cook for only me. From now your omlet recipe will help me to make my lunch. This sounds tasty and easy to make. Thanks for sharing.

What a great recipie! I don't eat a lot of eggs, but just today I was wanting an omlet! I eat alone a lot - being single. The roomie & I might fix something at the same time, but then each go off to our seperate computers to eat/watch tv/read.
