Quick and easy soup recipies?

Do you have any quick & easy soup recipes you'd like to share with your fellow MyLotters? I'm looking for something thats quick, easy and fairly simple too, so that i don't have to go out and buy expensive or hard-to-find ingredients. I don't want anything too spicy please, oh and nothing with mushrooms or celery in (my partner hates one, i have the other!).

Chickpea Chowder
4 cups low-soium, reduced-fat chicken broth
1 can (28oz) chickpeas, drained and rinsed
3 cups peeled, cubed potatoes
1½ cups thinkly sliced carrots
½ cup each chopped onions and chopped celery
1 tabelspoon lemon juice
1 bay leaf
1 clove garlic, minced
½ teaspoon each ground sage and ground thyme
¼ teaspoon each black pepper and salt
½ cup chopped fresh parsley
Combine all ingredients expect parsley in a large saucepan. Bring to a boil. Reduce heat to medium-low. Cover and simmer for 20 minutes. Remove bay leaf.
Using a potato masher, mash vegetables until soup resembles a coarsely pureed mixture. Stir in parsley and serve.

Oh wow, that sounds so yummy! I've been wanting to find more recipes with chickpeas and beans, they're so healthy and I sometimes don't get enough protein. Thanks for the recipe lena!

It is a bit juicy for a bone with little meat. Your not the only one to enjoy this. Sometimes I think my mother buys the chicken just for the little juicy bone. One of our most favorite soups involve Turkey necks. I know not quite the same thing but close enough. You just boil the turkey necks for s while and add some veggies. It makes a great pot of soup.

My favorite soup is very simple and fun to make. First I get a rotisserie chicken from the store. It's already cooked and sometimes it's flavored too. I like the lemon pepper one. It's not to spicy but it taste really good. Then I get the following vegetables
Carrots (Fresh)
peas (frozen)
Onion (Chopped and minced)
potatoes (two small ones chopped and diced)
Green Bell pepper (cut into sections)
First of all you need to take all the meat off of the chicken and save it in a bowl you can take off the skin too I usually save the skin too. The after you do that you want to put the bones and skin in half a pot of water or until the bones and skin are covered. Then brings to a boil for about 30 minutes to an hour. add salt, pepper to taste. Add any herbs that you want to..I usually add rosemary, salt, and pepper. After 30 minutes to an hour of boiling you need to remove the bones and skin and discard them. now add your vegies and cook for 15 minutes, then add the chicken meat that you saved earlier. Cook for 15 more minutes and then you have soup.
Notes:
I usually only boil the chicken bones for 30 minutes the longer the more taste but 30 minutes is pretty good.
After you boil the broth you can transfer everything in a crock pot, set it on low and you can go to work and come home to find a nice soup.
