homemade cheese

there was this episode of iron chef where the theme ingredient was milk and one of the iron chefs made cheese. yep and well within the 1 hr limit too. i remember he used vinegar and cooked it over fire, came out sa soft cheese. does anyone have an idea how this kind of cheese is made? any recipes?
