does alcohol cook out of food?

I've always heard that alcohol cooks out of food completely until an episode of Alton Brown's show on food network. He said that it doesn't. I was just wondering if anyone knows for sure one way or another. Or maybe if anyone knows how much would cook out and how much would remain.
