I played a little bit of Sims 2 University. It was kind of neat. I never got to spend enough time with it to get people into my university though. I spent way too much time decorating each room cute and that was it. I never owned an expansion myself though but can't decide which would to get if I would. Night life sounds cool though.
Can you have more than 1 expansion installed at the same time and have all the times from each expansion playable at the same time?

I'm a huge fan of the Sims 2 so I can answer all of your questions (even though over here, you only seem to have one). Well, for the Sims 2, you can always add more and more expansion packs. For example, if you want NightLife, you install NightLife on top of University and from then on, you are able to play NightLife along with University and the Sims 2. So think of it as layers. As long as you have the playable CD of the highest "layer" you're able to just pop in that CD and play the Sims 2 with the functions of the layers under it all accessible, if you get my metaphor that is.
As for my favorite expansion pack, well I don't really know yet. I'm known for purchasing the games (expansions especially) without really exploring into much depth what each one offers. I guess I'm more of a collector. Plus, I just simply don't have that much time to play. Even though I've owned the game since the first day it released, I haven't been able to go to University, nor have I able to play the stuff on NightLife. I did start up a business though, and that failed miserably. I haven't gotten a chance to buy Pets and/or Seasons yet, but I have a feeling that my favorite one will be either one of those two. For the original Sims, my favorite expansion pack was Unleashed (which was just basically pets) and I also had all of the expansion packs for the original sims, so I think it's logical that for Sims 2, I'd love Pets too.

I really would love to have Open for Business and Pets. But then again, I probably just want them all! I got the Sims 2 right when it came out. I got the DVD version of course. It was one of my best gaming purchases. :D

I have all the packs, and so far out for business is my favorite. I love not having to send my sims to work, but they still have a way to make money.

I have all of the expansion packs and so far Open For Business is my favorite. It just adds a lot of challenge to the game and I haven't even explored it fully yet. Seasons is my next favorite. I've only had it 2 days but I am having so much fun with it. I turned my sim into a plant person and they are so easy to care for I decided not to change him back. He maxed out all his skills putting him in permanent platinum mood. After that he spawned 2 children--Leaf and Summer. They start out as toddlers that have all their skill points and already know how to walk and talk which is awesome. They just sit and play all day long. Then he opened a home business selling the veggies he grows. His 2 children are now adults (there are only 3 stages--toddler/adult/elder) and help in the store. They don't sleep so the store is open all day and night. They only have to stop working to take a shower to get their water need up (unless it rains). It is great.
After that I like Pets, then Uni and then Nightlife. Nightlife came with a lot of neat stuff but I never send my sims on dates because they are too stressful and I hate leaving my lot. I hate waiting for downtown to load and then the lot then going home, etc. I guess I am still thinking how the game ran on my old computer (with the original Sims, actually) and it took 10 minutes to load a lot. Not it takes maybe 1-2 minutes but I can't wait that long because I get bored, lol.

I have just installed The Seasons and I love it! Only, by my oppinion one season might last longer, but then again...
I was counting down days, hours, minutes and seconds till Pets release and honestly I was a bit dissapointed :| Maybe I was hoping for too much, though I don't think so.
Other best expansion to me is Open for Business.

Yes definitely you could have more than one expansion installed and have all the features at the same time. I am currently in love with Sims Seasons, it's so much fun that I get to grow my own crops in the backyard and I really enjoy it. Also the 6 new career paths sound really fun. I never asked my sims to work before but now I would seriously consider letting them work just to experience building the career ladder.
